Don’t ever buy cornbread mix again. Make this instead. It’s sweet, slightly crumbly, doesn’t contain the preservatives in that boxed mix, and won’t take you more than three minutes longer to prepare. I bet you already have most of the ingredients in your pantry!
I love cornbread, especially when it’s got little kernels of fresh summer corn and a hint (or more than a hint) of honey flavor. You can have fun with this recipe and add bits of jalapeno, scallions, cheddar, or even bacon, if you’d like! Serve it warm with a pat of butter or alongside a bowl of spicy chili, as I’ll be doing tonight!
Sweet Honey Cornbread
Ingredients
- 1 cup Flour
- 1 cup Corn Meal
- 1 Tbsp Baking Powder
- 1/4 cup Sugar
- 1/2 tsp Salt
- 1 cup Buttermilk
- 1/4 cup Honey
- 1/2 stick Melted Butter
- 2 Eggs, lightly beaten
- 1 cup Sweet Corn Kernels
- 1/8 cup Honey, for brushing on top (optional)
Directions
Preheat oven to 375 degrees.
Lightly grease a small baking dish or cake pan.
In a bowl, combine flour, corn meal, baking powder, sugar, and salt until well blended.
In a separate bowl, whisk together the buttermilk, honey, melted butter, and beaten eggs. Pour the wet ingredients into the dry ingredients and mix just until they are combined. Do not over mix. Fold in the corn kernels.
Pour into the prepared baking dish. Bake for 30-35 minutes, until a toothpick inserted in the middle comes out clean.
If desired, brush the top of the cornbread with a little honey, about 20 minutes into the baking time.
Allow the bread to cool for about 15 minutes before cutting and enjoying!
Check back later today for a spicy chili recipe!

Looks great!
I love cornbread with maple butter!!
Yum! Can’t wait for my lunch break : )
Oooh! Maple butter! Great idea!
Qué delicia, espero encontrar todos los ingredientes!
Hola, Ana Maria. Gracias por mirar mi blog.
Can I just take out the sugar if I want it unsweetened or will it taste funny?
Hmm…you could probably take out the sugar if you kept the honey and maybe added a touch more honey. It would probably taste a bit salty and bland completely unsweetened. Worth a try though… What about using a fruit puree or applesauce for a bit of sweetness?
That could work – a bit of fruit puree sounds about right! 🙂
Looks great…and quite easy to make..
I guess I will make it at home soon… ;))
Thanks for your comments!!
Hi
your cornbread looks oooh so delicious. I can vibe with it as I make my own bread round the year and
this is one more I can try out.
When I make my wholewheat I add oats, flax seeds, grated carrot and chopped parsley too. It
comes out so well and I need only 2 slices to feel full the whole morning.
I’m on foodie blogroll too

That sounds great! And very nutritious too! Thanks for checking out my blog!
Ah, wonderful. I love cornbread. Will definitely make this!
This looks really good, and I don’t care for corn bread! Whenever I eat it I have to cover it with butter and honey, so I will have to try this.
Thanks for sharing!
Ah. Looks delicious!
I immediately checked to see if your ingredients included buttermilk … A+! It’s the secret to tender, delicious cornbread in my opinion. Now you’ve got me hankering to try the fresh corn.
There is nothing like cornbread…it’s one of the best comfort foods out there, especially served with chili! Thanks for sharing!
You’re welcome! Thanks for your comments!
I just made cornbread from a mix. In my defense, it was marked down to 49 cents.
Growing up my Mom would make cornbread every Wednesday from scratch. So if my Mom can do it. I’m going to have to try.
Thx

Hard to argue with that! Thanks for checking out my blog!!
Hello,
THis recipe looks great.
I’m all set to make this recipe today, except I don’t have any buttermilk. What’s the substitution for buttermilk? I’ve read it before.
Great photos especially the last one is mouth-watering with the drizzle of honey.
In a pinch, I’m sure the recipe would work fine with regular milk.
Or… My aunt just shared Emeril’s method for making your own buttermilk:
4 1/2 teaspoons white vinegar, or fresh lemon juice
1 cup milk
Directions
Place the vinegar in a glass-measuring cup, and add enough milk to make 1 cup total liquid. Stir to combine and let stand for 10 to 15 minutes (The mixture will begin to curdle).
Thanks gourmandmom for your prompt reply.
I’ll return to the kitchen to make the recipe, can’t wait to taste it.
My grandmother taught me that trick, and it works great when making breads! I cannot wait to try this recipe…doing it Tonight. I always loved eating my Nana’s cornbread, but I never have been able to make it the same. I bet she’d be really impressed by me making this! Thanks.

mmm, I’ve never tried making cornbread but this looks like a great recipe! I’ll have to give it a shot!
What is better than fresh out of the oven, homemade corn bread??!!!
Not much!!
I cannot wait to try this recipe out 🙂 Glad I found your blog ~ the recipes look promising!
This looks soooo yummy! I’m going to have to give this a try 🙂
this looks delicious and I’m always up for a new recipe with honey … I’m going to make a change of no corn (just a personal preference) and a bit of crushed rosemary. I love crushed rosemary in my cornbread! A little red pepper too. 🙂
love your blog!
Yum! Rosemary sound delicious!
OMG! This looks so good!

Your recipe is also my standard. It’s interesting that there are two schools of thought on cornbread, sweet or unsweeet. I think the unsweet is bland myself but some people do prefer it. Another way to spice it up? Use a can of Mexicorn or add some chopped jalapenos. Yummm! Your photos are making me hungry… North Coast Muse @ http://sally1029.wordpress.com
Yum! You’ve officially made me hungry!
This looks delicious! I love that the little kernels of corn are so visible in this. Yum!
looks delicious.. i’ll have to try it.
Great blog! This cornbread would be really good with fresh green beans and corn.

This looks AWESOME, and definitely not the standard boring cornbread. I usually bake mine in a cast iron skillet, and have been experimenting with using corn flour rather than corn meal. Corn flour is what tortillas are made from, and is probably hard to find in some regions. I will try your recipe next time.
Yum! It sounds strange, but I don’t think I’ve ever had cornbread with fresh corn. I like the idea of adding jalapenos or scallions too. I wish I had some to eat right now!
I love cornbread, and with the fresh corn in it, this looks amazing!
looks delicious. Will also pass it on to a friend of mine.
aahhhh cornbread with actual corn in it. What an idea! :)))))
i luv me some cornbread lol
Your scrumptious-looking cornbread is on my list! Glad I clicked on the Freshly Pressed link, which I typically have no time to do!
I had the same question about omitting sugar, as I eliminated refined sugar (by and large) from my diet this year–and now don’t miss it at all! (Seriously… and surprisingly.) (I write about it at my yoga blog.)
Anyway, glad I found you and congratulations on making the Freshly Pressed list.
I adore cornbread and all the variety that it has to offer (a big fat YES to having it filled with little corn kernels..yum! 😀 )
Thanks so much for sharing this delicious recipe. I’ll be adding it to my list of things to make. 😀
Yummm…I’ve never managed to make a batch of cornbread that I really liked, but this looks wonderful. I will have to try this tomorrow. Thank you!
Tried this last night for our dinner party. OMG delicious!!! Best conrbread ever, thank you so much for sharing the recipe.
So happy you enjoyed it! Thanks for leaving a comment to let me know!
: )
Looks like an excellent recipe! I am always on the lookout for a GOOD cornbread recipe. I love your blog/recipes, great pics, and look forward to trying a lot of these.

mmm..your cornbread looks so soft and feathery! I’m definitely going to try your recipe out.
Gracias, Alba!
Thanks I will be doing some very yummy desserts.
That looks AMAZING!! I am SO going to try your recipe… thank you 🙂
wooww…looks like so delicious..
i will write down the recipe and ask my sister to cook it for me..
thanks
it looks delicious! I’ll cook it!
Oooo…I’m convinced ;] This looks truly delicious, I’ve always been suspicious of corn desserts for some reason, things like corn muffins sounded…healthy. But I really like the sweet look of yours, especially the wee bits of corn peeking out. All I need is cornmeal now.
Wow, this looks amazing and whoo for ridding corn bread mixes with preservatives. Seriously though, I just moved out of the South and have been craving cornbread. I made some the other day but yours is just amazing. I will have to try it. Yum!
Wow I tried this cornbread it is amazing.
Thanks so much!! I’m really glad you enjoyed it!
Ah! Can’t wait to try this. Anything with honey is good for me!
Thanks for checking out my blog!
I love bacon in corn bread–even better the next day when you slap some butter on it and grill it!
great step by step pictures!
Yum…grilled cornbread sounds delicious!
Very good cornbread!
Thanks!

Love cornbread. made my own today and agree with you that the best is NOT a mix. I make mine in an iron skillet which I’ve heated on top of the stove first. My recipe is similar but more corn meal and less flour and sugar. I froze the remainder for another day but wow it was good with butter and honey! Great read, thanks
Yummers! Cant’ wait to try it!
