Sweet Honey Cornbread

Don’t ever buy cornbread mix again. Make this instead. It’s sweet, slightly crumbly, doesn’t contain the preservatives in that boxed mix, and won’t take you more than three minutes longer to prepare. I bet you already have most of the ingredients in your pantry!

I love cornbread, especially when it’s got little kernels of fresh summer corn and a hint (or more than a hint) of honey flavor. You can have fun with this recipe and add bits of jalapeno, scallions, cheddar, or even bacon, if you’d like! Serve it warm with a pat of butter or alongside a bowl of spicy chili, as I’ll be doing tonight!

Sweet Honey Cornbread

Ingredients

  • 1 cup Flour
  • 1 cup Corn Meal
  • 1 Tbsp Baking Powder
  • 1/4 cup Sugar
  • 1/2 tsp Salt
  • 1 cup Buttermilk
  • 1/4 cup Honey
  • 1/2 stick Melted Butter
  • 2 Eggs, lightly beaten
  • 1 cup Sweet Corn Kernels
  • 1/8 cup Honey, for brushing on top (optional)

Directions

Preheat oven to 375 degrees.

Lightly grease a small baking dish or cake pan.

In a bowl, combine flour, corn meal, baking powder, sugar, and salt until well blended.

In a separate bowl, whisk together the buttermilk, honey, melted butter, and beaten eggs. Pour the wet ingredients into the dry ingredients and mix just until they are combined. Do not over mix. Fold in the corn kernels.

Pour into the prepared baking dish. Bake for 30-35 minutes, until a toothpick inserted in the middle comes out clean.

If desired, brush the top of the cornbread with a little honey, about 20 minutes into the baking time.

Allow the bread to cool for about 15 minutes before cutting and enjoying!

  5. Can I just take out the sugar if I want it unsweetened or will it taste funny?

    • Hmm…you could probably take out the sugar if you kept the honey and maybe added a touch more honey. It would probably taste a bit salty and bland completely unsweetened. Worth a try though… What about using a fruit puree or applesauce for a bit of sweetness?

    When I make my wholewheat I add oats, flax seeds,grated carrot and chopped parsley too. It
    comes out so well and I need only 2 slices to feel full the whole morning.

  13. I just made cornbread from a mix. In my defense, it was marked down to 49 cents.

    Growing up my Mom would make cornbread every Wednesday from scratch. So if my Mom can do it. I’m going to have to try.

    THis recipe looks great.
    I’m all set to make this recipe today, except I don’t have any buttermilk. What’s the substitution for buttermilk? I’ve read it before.

    Great photos especially the last one is mouth-watering with the drizzle of honey.

    • In a pinch, I’m sure the recipe would work fine with regular milk.
      Or… My aunt just shared Emeril’s method for making your own buttermilk:
      4 1/2 teaspoons white vinegar, or fresh lemon juice
      1 cup milk
      Directions
      Place the vinegar in a glass-measuring cup, and add enough milk to make 1 cup total liquid. Stir to combine and let stand for 10 to 15 minutes (The mixture will begin to curdle).

  25. Your recipe is also my standard. It’s interesting that there are two schools of thought on cornbread, sweet or unsweeet. I think the unsweet is bland myself but some people do prefer it.   34. This looks AWESOME, and definitely not the standard boring cornbread. I usually bake mine in a cast iron skillet, and have been experimenting with using corn flour rather than corn meal. Corn flour is what tortillas are made from, and is probably hard to find in some regions. I will try your recipe next time.

    I had the same question about omitting sugar, as I eliminated refined sugar (by and large) from my diet this year–and now don’t miss it at all! (Seriously… and surprisingly.) (I write about it at my yoga blog.)

  48. Que bien me encaanta!!, aca en Sonora , Mexico, rellenamos con queso asadero o fresco como panela y muy poca azucar (como 1 cucharada sopera), si te gusta con chile o no, y es adictivo, yo solo uso la 1/2 de margarina y la 1/2 de aceite

  53. Oooo…I’m convinced ;] This looks truly delicious, I’ve always been suspicious of corn desserts for some reason, things like corn muffins sounded…healthy. But I really like the sweet look of yours, especially the wee bits of corn peeking out. All I need is cornmeal now.

  59. Love cornbread. made my own today and agree with you that the best is NOT a mix. I make mine in an iron skillet which I’ve heated on top of the stove first. My recipe is similar but more corn meal and less flour and sugar. I froze the remainder for another day but wow it was good with butter and honey! Great read, thanks
