Duck Breast a l’Orange in Crepes

Happy National Waffle and National Oyster Day! In honor of these special occasions, I’ll be making oyster waffles today!

Don’t worry. I’m totally kidding. We don’t need to celebrate every food holiday.

No, we will not be having oyster waffles today. We’re having crepes. I was watching a show on the Food Network the other night, Best Thing I Ever Ate, where top chefs shared, you guessed it, the best things they’ve ever eaten. Chef Beau Macmillan talked about these crepes filled with Nutella and covered with strawberries and bananas that he ate at a place called FlipHappy in Austin, Texas. Everything about them looked delicious. I set my mind on making crepes sometime this week. Since I’ve already shared a dessert recipe this week, I figured I should make savory crepes. It took me all of about a minute to decide what to make.

I’ve had Duck a l’Orange cued in my draft list for weeks, just waiting for the right opportunity. I’d planned to serve the sliced duck breast a l’orange with rice or potatoes, perhaps pommes dauphinoise. But something about the sweet and savory orange sauce with orange zest and juicy orange supremes is screaming to put in a crepe. I think I’ve found my perfect opportunity to make duck a l’orange.

Don’t be put off by the fancy name and don’t be intimidated if you’ve never made duck before. This meal is really a piece of cake. Make it for a dinner party and impress your guests with your fancy French dish. Really impress them by talking about how you started with a gastrique (which is just the slightly caramelized sugar/vinegar combination that starts the sauce). Bowl them over by mentioning that you reduced the orange juice to concentrate the flavor or comment on the fresh orange supremes. Chat about how you rendered the duck fat or how you mounted the sauce with butter just prior to serving, to give it a nice, rich feel. Then, toss your hair back, giggle, and say, “Really, it was nothing.” Seriously though, this dish is really not too complicated to make and works really well for dinner parties since it can be mostly prepared ahead of time.

For the purpose of this recipe, we’re using duck breasts. No need to deal with a whole duck. My supermarket carries packaged duck breasts right near the poultry section. If you can’t find them at your grocery store, try asking at the butcher counter. They may be able to order them for you. Doesn’t hurt to ask. The packaged duck breasts I purchased came pre-scored, for my convenience. If yours are not, you’ll want to cut a crosshatch pattern in the fat, being careful not to cut into the meat. The crosshatch pattern will help the fat the break down during cooking.

You can prepare the sauce and even cook the duck ahead of time. Zest and supreme your oranges beforehand too. When dinner rolls around, you’ll simply need to cook the crepes, reheat the sauce with the duck and orange supremes. Add the zest and butter and you’ll be in business!

Edited to add: As I discovered last night, the crepes actually reheat well too. Wrap the cooked crepes in foil and refrigerate until you’re ready to use. To reheat, place the stack of crepes between two paper towels and microwave for about 20 seconds or so.

Duck Breast a l’Orange in Crepes

Ingredients

For the Duck

  • 2 Duck Breasts
  • 1/4 cup Sugar
  • 1/8 cup White Wine Vinegar
  • 2 Ice Cubes
  • 1 cup Orange Juice
  • 1 1/2 cups Chicken Stock
  • 2 tsp Cornstarch
  • 2 tsp Water
  • 1 Tbsp Butter, cold
  • 2 Oranges, supremed*
  • Zest from 1 Orange
  • Salt and Pepper

For the Crepes

  • 2 Eggs
  • 1/4 tsp Salt
  • 1 cup Flour
  • 1 1/4 cup Milk, plus a bit more if necessary
  • 2 Tbsp Vegetable Oil
  • 1 Tbsp Sugar

Directions

For the sauce: Combine sugar and vinegar in a saucepan over medium heat. Cook, stirring constantly, until the mixture begins to turn a medium amber color. Remove from heat. Add an ice cube or two to stop the cooking, so it does not become too dark or burn. (This is your gastrique.)

Add the orange juice. Whisk to combine and return to the heat. Bring to a simmer and cook over medium heat for about 5-7 minutes until the sauce has reduced to 1/2 cup. Add the chicken stock. Bring to a simmer and cook for about 15 minutes, until about 1 cup of sauce remains. Combine cornstarch and water in a small bowl. Add a spoonful of the hot sauce to the cornstarch mixture. Then add the mixture to the sauce. Simmer for another minute or two until the sauce is well thickened. Season with a little salt and pepper. Remove from heat. You can prepare the sauce to this point ahead of time.

For the duck: Season the duck breasts with a little salt and pepper. Heat a pan over medium heat until a drop of water sizzles when it touches to pan. Place the duck breasts in the pan, fatty side down. Cover and cook for about 8-10 minutes. Most of the fat will render (melt away) and you’ll be left with a thin crispy layer of fat.

Turn the breasts, cover, and cook on the other side for about 10 minutes. They should reach an internal temperature of 165 degrees, as measured by an instant-read meat thermometer. Remove from the pan and allow the duck breasts to rest for about 5 minutes. Remove the remaining layer of fat, if desired. Cut the duck breast into small pieces.

For the crepes:

Lightly beat the eggs with the salt. Combine the eggs with the flour, milk, oil, and sugar. Add additional milk, if necessary. The batter should move very easily, but not be overly liquidy. Spray a flat-bottom, nonstick skillet with cooking spray, then heat the skillet over medium heat. Hold the pan off the heat and use a measuring cup to pour about 1/3 cup of batter into the pan. Quickly, turn the pan to spread the batter across the entire bottom. Place the pan over the heat and cook for less than a minute. Use a spatula to loosen one of the edges. Then, use your hands to flip the crepe. Cook for a few seconds more on the other side. Make 8 crepes.

To assemble the dish:

When you’re ready to serve, reheat the sauce in a saucepan. Add the orange segments, about half of the orange zest and the pieces of duck. Toss to gently combine. Simmer gently for a few minutes until the duck and sauce are heated. Remove from the heat. Add the butter and gently swirl the mixture until it melts and blends with the sauce. Place a spoonful of the mixture onto one quarter of the crepe.

Fold the crepe in half over the mixture, then in half again to form a triangle shape.

Repeat for all crepes. Serve each person 2 prepared crepes. Drizzle with a little extra sauce, if desired. Garnish with the remaining orange zest.

Makes 4 Servings

**If you wish to make this duck a l’orange to serve in a way other than with crepes, you can follow the same procedure, but slice the duck, rather than cutting it into small pieces. Also, you can omit the cornstarch in the sauce. I added cornstarch to thicken the sauce to prevent the crepes from getting soggy, but if you’re not serving the dish with crepes, this is not a concern.

White Garlic Lasagna

For as much as I love food and all things food-related, there are whole worlds of food content that I’m entirely clueless about. Take, for example, the presence of a food blogging community. Prior to beginning my own blog, I had no idea that such a community of like-minded individuals existed. I emphasize the word, community, because it truly describes the support and camaraderie which exists amongst this group of food-lovin’, food-writing, food-photo-taking people.

And it’s through this group of food-focused people, that a whole other world of food knowledge has been opened for me. I’m talking about the world of food holidays; national days of observance devoted to food. Take, for example, September 26, which is National Corned Beef Hash Day or October 8 which is National Fluffernutter Day. And you can bet your bippy I’ll be celebrating National Bagels and Lox Day when February 9 rolls around. I found out, only after reading another food blogger’s blog, that yesterday was National Watermelon Day. I did an inner dance of joy for the accidental appropriateness of yesterday’s Watermelon Roll post. Then I started probing around for more information about food holidays, cause I’m all over the idea of celebrating food. And I found this link, with a comprehensive list of food holidays.

Turns out that today is Nationa Lasagna Day. How in the world is a girl supposed to let a special day like this go by without a little celebration? So, tonight I’m making a lasagna inspired by my favorite kind of pizza in the whole world; white garlic. My husband and I clash heads on this topic almost every time we order pizza. He asks what kind of pizza I want. I say White Garlic. He says Bleh. Occasionally he’ll agree to a garlic pizza, as long as we add some crumbled sausage on top. But I could eat white garlic pizza every time and never miss the tomato sauce.

You won’t miss the tomato sauce in this lasagna either. For the sauce, I made a basic white sauce, with the addition of minced garlic and a bit of asiago cheese. I could eat bowls full of this garlicky sauce as if it were soup. It would be seriously fantastic over pasta. Then, I threw a bit more garlic in the spinach mixture so the lasagna is absolutely oozing with garlic. For my hubby, I added some spicy Italian sausage to the lasagna, but it would totally work without it. I truly love how this lasagna came out. It’s like having a slice of garlic pizza, between noodles of lasagna.

White Garlic Lasagna

Ingredients

  • 3 Hot Italian Sausages
  • 1 Tbsp Olive Oil
  • 1 box No-Boil Lasagna Noodles
  • 1 1/2 cup Mozzarella Cheese, shredded*
  • 1/2 cup Fontina Cheese, shredded
  • For the Spinach Mixture

    • 1 16 oz package Frozen Chopped Spinach, defrosted and squeezed dry
    • 1 15 oz container Ricotta Cheese”
    • 2 tsp Garlic, minced
    • 1/4 tsp Salt
    • 1 egg, lightly beaten

    For the Garlic Sauce

    • 3 Tbsp Butter
    • 1 Tbsp Garlic, minced
    • 3 Tbsp Flour
    • 2 cups Milk”
    • 1/2 cup Asiago Cheese, shredded
    • 1/2 tsp Salt
    • 1/8 tsp Cayenne
    • Pinch of Nutmeg

    *Reduced fat cheeses and milk would work fine with this recipe.

    Directions

    Preheat oven to 375 degrees. Spray a 13×9 baking dish with cooking spray. Heat 1 Tablespoon olive oil in a skillet. Remove the sausage meat from the casings. Add the sausage meat to the hot skillet and cook until fully-cooked, using a spoon to break it into small pieces. Set the cooked sausage aside.

    Combine the spinach with the ricotta cheese, minced garlic, and salt. Stir in the lightly beaten egg. The egg will help to bind the spinach-ricotta mixture.

    In a saucepan, melt the butter over medium heat. Add the 1 Tablespoon minced garlic to the butter. Cook for about two minutes. Add the flour to the mixture and stir. Cook for about 3 minutes, stirring frequently. Gradually whisk in the milk until smooth. Bring to a simmer and continue cooking for 4-5 minutes, until the milk begins to thicken. Turn down the heat. Add the asiago cheese, salt, cayenne, and nutmeg. Stir to combine.

    Spread a very thin layer of the sauce into the prepared baking dish. Lay 3 no-boil lasagna noodles over the sauce. Spread half of the spinach mixture on top of the noodles. Sprinkle with half of the sausage. Drizzle with about a third of the sauce. Lay 3 more lasagna noodles on top. Spread the other half of spinach mixture. Sprinkle the other half of sausage. Drizzle another third of the sauce. Lay 3 more lasagna noodles on top. Drizzle with the remaining third of sauce. Sprinkle with the mozzarella and fontina cheeses. Cover the baking dish with foil. Bake in the oven for about 45 minutes. Remove the foil. Bake for 10-15 more minutes, until the top begins to brown. Remove from the oven and wait 5 minutes before cutting.

    The Hangover Burger

    Thought I was so slick. Went down to the grocery store Friday night and picked up all the things I would need for tonight’s dinner. The supermarket was quiet, peaceful, a virtual oasis of food; unlike on summer weekends, where it transforms into a frenzied circus of activity. But I was ever so clever and got it all taken care of Friday night.

    Then, I woke up this morning, not so bright-eyed and bushy-tailed; the result of a small child who decided to start his day at 5:00am. I made the kids their breakfast, tended to the labrosaurus rex, and started the coffee. I had a hankering for some eggs in a hole; the dish my mom used to call Rocky Mountain Breakfast. So I heated a little butter in a pan, removed the centers from my bread, cracked the eggs into the middle, and fried them up. Then I sat down to enjoy my delicious breakfast.

    Boy, did it hit the spot! I could have eaten two more, but I’d used the last of the eggs. I sat there, lingering over the last bite and then it struck me. Right smack in the middle of my head. I’d intended to use those eggs for tonight’s dinner. Foiled again by my overwhelming food cravings!! So much for avoiding the supermarket on the weekend.

    Tonight’s dinner is an indulgence; a guilty pleasure. You’d better start running in place right now, cause it’s going to take some work to burn off the calories in this one. It might be a good idea to have your blood pressure checked before consuming. It will be worth it though.

    Austin Grill, a Maryland based Tex-Mex restaurant has a burger on their menu called The Hangover Burger. I’m not exactly sure whether this burger is intended to be the cure or the cause of the hangover. But, lordy, lordy is this a good one! I ordered it once and dreamed about it forever after. The burger features a beef patty, smothered with chili, bacon, queso, roasted jalapeño peppers, and a fried egg. It’s the egg that really does it for me!

    Tonight, we’re having my version of The Hangover Burger. Once, you’ve made the chili, there’s really nothing to it, besides putting the pieces together. Here’s how it’s done…

    Austin Grill-Inspired Hangover Burger

    Ingredients

    • Burger Patties
    • Hamburger Buns or Hard Rolls
    • Bacon
    • Chili Con Queso
    • Chili*
    • Eggs
    • Butter
    • Jalapeño Pepper
    • Salt and Pepper

    Directions

    Cut the jalapeño in half. Remove the seeds and ribs. Roast in a 300 degree oven for about 45 minutes, until softened. When cool enough to handle, cut into small pieces. Set aside. Cook the bacon and place a few slices on each bun. Season the burgers with salt and pepper. Grill or broil the burgers to your preferred doneness. While the burger is cooking, warm the chili and queso. Place the cooked burgers on top of the bacon. Top with a spoonful of chili and a spoonful of warm chili con queso. Sprinkle with the roasted jalapeño peppers. Top with a freshly fried egg.

    Serve with a side of steamed broccoli, to make yourself feel better about eating the burger.

    I foresee many salads in my future.

    Chicken and Spicy Peanut Dipping Sauce

    This post almost didn’t happen. This post was almost a picture of a salad from Panera or burger from Five Guys. I’d begun gathering what I needed for dinner, my mise en place, if you will. It wouldn’t take more than 15 minutes to prepare. But 15 minutes was apparently way too long for my littlest guy. As I moved about the kitchen, he was on my heels, quick as a cheetah and loud as lion. Hold my hand. I’m ready to snuggle up. He roared. He screeched. He howled. And I surrendered to my little master. The kids’ dinner became a quick PB&J and microwaveable mac and cheese. The screaming stopped. I packed away the ingredients for tonight’s intended dinner. I’m not proud. But hey, I never claimed to be supermom.

    Once everyone had their fill of snuggle and food, I had the chance to prepare the dinner I’d planned; breaded chicken with a spicy peanut sauce. Honestly, this is all about the peanut sauce. The chicken is merely a vehicle to transport the sauce to my belly. It’s sweet, it’s spicy, it’s salty. This sauce is also magic with skewered, grilled chicken and shrimp.


    Spicy Peanut Dipping Sauce

    Ingredients

    • 1/2 cup Peanut Butter
    • 1/4 cup Brown Sugar, loosely packed
    • 1 Tbsp Lime Juice
    • 2 Tbsp Soy Sauce
    • 1 tsp Minced Garlic
    • 1/2 tsp Cayenne Pepper (plus more, if desired)
    • 1/4 tsp Ground Ginger
    • Chopped Peanuts and Sliced Scallions, for garnish

    Directions

    Place the peanut butter in a microwaveable bowl. Microwave for a few seconds to soften the peanut butter. Add other ingredients and stir to combine. Add small amounts of warm water and stir until the sauce reaches your desired consistency. Taste and add more cayenne, if desired. Top with the chopped peanuts and/or scallions.

    Delicious served with chicken or shrimp!

    For the chicken:

    Season chicken tenders or chicken breasts cut into strips with a sprinkle of salt and pepper. In a small bowl, beat a couple eggs. Dip the chicken in the eggs. Then roll the chicken in seasoned bread crumbs until well-coated. In a pan, heat a couple tablespoons of olive oil over medium heat. Add the chicken and cook for a few minutes on each side until lightly browned and cooked through.

    Wow! What a whirlwind blogging day this became! I was so thrilled to find myself on WordPress’s Freshly Pressed today. It’s exciting to know that there are people out there who are enjoying what I’ve been posting. Thank you so much for all of the wonderful feedback! I’ve been smiling all day. I’d also like to thank Netflix Instant Streaming for entertaining the kiddies while I’ve played in the blogosphere and chatted about cornbread all day.

    In light of my day trip to the big time, my sister thanked me for changing the world with my blog. (I sense a touch of sarcasm in her comment.) But, you’re welcome, sis. It’s been my lifelong ambition to change the world, one pan of cornbread at a time.

    The cornbread recipe was actually just Part 1 of 2. The main course tonight is the chili. But I have to be honest about the chili. The only reason I’m making chili tonight is because I want to use the leftovers for another recipe I’m working on. Poor neglected chili, upstaged by the cornbread and brought into this world with the intention of being leftover.

    Regardless of its inception, it’s good chili; worthy of praise in its own right. I have a secret ingredient. I’ve swooned over skirt steak before for its wonderful flavor and texture in quesadillas and sandwiches. And I’m going to swoon over it again today for the intense beefy flavor and delicious chewy tidbits it adds to my chili; ever so pleasing to eat. If you can’t get your hands on skirt steak, flank or hanger steak would make suitable substitutions.

    Besides the skirt steak, this is a pretty basic, spicy beef chili recipe. As with most of the things I cook, the ingredient list is limited and focuses on the flavors that matter. We like our food pretty spicy over here, but you can adjust the seasonings to suit your tastes. (If you like it super spicy, throw a pureed chipotle in the mix.) If you’re cooking for kids, set a bit of milder chili aside before you season for yourself. Serve this chili with a side of my Sweet Honey Cornbread or over a bowl of macaroni.

    The Gourmand Mom’s Spicy Beef Chili

    Ingredients

    • 1/2 pound Skirt Steak
    • Salt and Pepper, for seasoning steak
    • 1 Tbsp Olive Oil
    • 2 cups Onion, diced (about 1 Large Onion)
    • 1 Tbsp Garlic, minced
    • 1 Jalapeno Pepper, seeds and ribs removed, finely diced
    • 1 pound Ground Beef
    • 1 1/2 Tbsp Chili Powder
    • 1 tsp Salt (plus more, if desired)
    • 1 tsp Cayenne Pepper (plus more, if desired)
    • 2 cups Crushed Tomatoes
    • 1 can Kidney Beans, slightly drained

    Directions

    Preheat oven to 425 degrees. Place the skirt steak on a baking sheet. Season with salt and pepper. Place on the middle rack of the oven and cook for about 10 minutes. When cool enough to handle, cut the steak into small pieces. Set aside.

    In a large pot, heat olive oil over medium heat. Add onion and cook for 3-5 minutes, until slightly transparent. Add the garlic and jalapeno. Cook for a few minutes more. Add the ground beef and cook until completely brown, using a spoon to break it up as it cooks. Once the ground beef is fully cooked, add the bits of skirt steak and any juices that have leaked from the steak. Add the chili powder, cayenne and salt and stir to combine. Cook for a minute or two. Add the crushed tomatoes and the kidney beans. Stir to combine. Cook for about 5-10 minutes, until all ingredients are heated through and the flavors have mingled. Taste and adjust the seasoning with more salt and cayenne, as desired.

    Serve with cornbread, rice, or macaroni. Top with cheese, scallions, or sour cream if desired.

    Leftovers freeze and reheat well. Keep a lookout for an upcoming recipe which will feature the leftover chili.

    Lobster Macaroni and Cheese

    Today’s a very special day! Right now, at this very moment, you are reading my 100th blog post! Wow! One hundred posts! Where in the world did the time go? It seems like just yesterday that I was spending all of my free time tending to my imaginary mafia.

    Change a diaper. Beg for untraceable cell phones and illegal transaction records. Play legos. Save up enough Thai Baht to buy a Nguhea Sniper Rifle. Clean up the play-doh that’s been rubbed into the carpet. Try to collect the last faberge egg for my Moscow collection. Console a crying baby. Spend 24 million rubles on a musk ox. All in a day’s work.

    Then, I abandoned my mafia and entered the blogosphere. Now I alternate between toys, cooking, temper tantrums, food photography, snuggling, recipe writing, laundry, editing, bath time, and menu-planning. I suppose that being The Gourmand Mom is a much more productive role than Mafia Wars Mom.

    So, you may be wondering what else has changed during these past 100 posts.

    Well…

    Writing recipes feels a whole lot easier than the first few posts that I fumbled through. I hope they’ve become easier for you to follow.

    I’ve baked more bread products than I ever did in my pre-blog life. In fact, I had to buy a new cover for my dining room table, since the old cover seemed to be harvesting yeast which my three year old so kindly scattered across the table.

    I’ve gained back a couple of the pounds I worked so hard to lose. Going to have to fix that. But it’s been for a good cause and I had fun doing it. Perhaps I can file for some sort of blogger’s compensation for my troubles?

    My love of cooking has been completely reinvigorated.  Having a forum for sharing recipes and stories about food has been truly fulfilling for me. Thank you for being my audience.

    Having an audience has forced me to add even more variety to my cooking. Since I’m guessing you don’t want to read about the same recipes every week.

    My children have become the most skilled toddler sous chefs. I think I need to find little aprons and chef’s hats for them.

    Through practice, my photography has become more purposeful. Now, rather than taking a hundred pics to get five that are post-worthy, I take about fifty. Though I’m still quite the novice photographer, I’m getting better at judging lighting and approximating camera settings.

    It’s been a fun hundred posts. I’m looking forward to writing a hundred more!

    In honor of such a momentous occasion, I’ve been saving something special for you. My favorite food in the whole world is macaroni and cheese (or ‘Ronis and Cheese, as my little guy calls it). And I don’t discriminate. I love ALL macaroni and cheese, whether it’s frozen, from a box, or made fresh from the finest cheeses. I like it baked or creamy. I like it smothered with cheese and bread crumbs or not. Just give me any macaroni and some form of cheese and I’m a very happy girl.

    Today is a special day though, so a special macaroni and cheese is in order. And I’ve got just the thing to turn something sort of pedestrian into something elegant and worthy of a celebratory meal. That’s right… Lobster!! Lobster makes everything fancy. Now, once we throw lobster into the mix, we need to pay special attention to the cheese selection. Now would NOT be the time for American cheese or Velveeta. They’ve certainly got their place in the world of mac and cheese, but it’s definitely not here. Now’s the time for smooth cheese with grown-up flavor. I’m using three of my all time favorite cheeses; Gruyere, Fontina, and Brie. You can substitute other cheeses, if desired. Try gouda, chevre, provolone, asiago, or sharp cheddar.

    Our sauce starts as a basic Bechamel Sauce, which is simply a white sauce, made with milk that is thickened with a roux. (Check out my roux guide by clicking here.) The thickened milk is then seasoned with salt, pepper, and a pinch of nutmeg. Bechamel is one of the five French mother sauces, meaning that many other sauces can be made with a base of bechamel. To our bechamel, we’ll melt in the delicious cheeses. Finally, we’ll toss the macaroni with the sauce and warm lobster meat. If you feel like racing lobsters, go ahead and buy some live lobsters, steam them, and collect the meat. Or, do as I did and buy a container of frozen lobster meat. You grocery store may also sell lobster tails, which can be steamed.

    Before we get to the recipe, I want to let you in on a little secret. I made the macaroni and cheese on Saturday when we had people over. And I actually sort of botched it. Not a complete botch, but a definite error of convenience. My prime focus at the time, was on the burgers. My intention was to submit the burger recipe for a contest. So, I wanted to be able to devote all of my attention towards working out the timing and flavor balance of the burger components. Then the storm came, which totally turned the burger plan upside down. Anyway, I prepared the macaroni and cheese earlier in the afternoon and stuck it in a baking dish, figuring that I’d bake it in the oven to reheat with a little extra cheese melted on top. As I should have anticipated, the pasta drank up most of the sauce during the baking. It was still very flavorful, but not the creamy mac and cheese I’d intended.

    Never fear though. The recipe I’m writing for you does not include a baking step. So, your macaroni and cheese will be creamy and delicious. If you do want to prepare it ahead of time, I’d recommend tossing the pasta with just a bit of sauce. Then, refrigerate the bulk of the sauce and the pasta separately. You can reheat both and combine, along with the lobster, when you’re ready to eat.

    This is good, good stuff. If there were a way to send food through the world wide web, I’d send you each a taste and a glass of celebratory champagne. But since that’s not possible yet, I’ll share my recipe instead. Then you can whip yourself up a batch of fancy ‘Ronis and Cheese.

    Lobster Macaroni and Cheese

    Ingredients

    • 1 box Pasta, such as Campanelle
    • 1/2 cup Gruyere
    • 1 cup Fontina
    • 1/2 cup Brie
    • 3 cups Milk
    • 3 Tbsp Butter
    • 3 Tbsp Flour
    • 1/8 tsp Nutmeg
    • 1/8 tsp Cayenne
    • 1/2 tsp Salt
    • 1 pound Lobster Meat

    Directions

    Cook the pasta al dente, according to package directions. Drain and rinse with cold water to stop the cooking. Set aside. In the same pot that you cooked the pasta, whisk the butter and flour together over medium heat. Cook for 2-3 minutes, stirring constantly. This is your roux for thickening the milk. It should have a pasty consistency. Remove the roux with a spatula and set aside. Add the milk to the pot. Bring the milk to a simmer. Then, begin to whisk in the roux, whisking until smooth. Allow the milk to simmer with the roux for a few minutes until it begins to thicken. Whisk constantly. Add the nutmeg, cayenne, and salt. Turn down the heat to low. Add the cheese and stir until smooth. Taste and adjust seasoning with salt and pepper, if desired. Add the lobster meat and the cooked pasta to the hot sauce. Stir for a minute or so until it’s well combined and hot.

    Chicken Cordon Bleu and Green Beans Almondine

    Chicken Cordon Bleu has been on my mind recently. I just love the crispy breaded chicken breast combined with salty prosciutto and cheese. Yum… Cheese. Lately, I’ve been acutely aware that if you don’t like cheese, you probably hate my blog. I’ve kind of got a little thing for cheese. I sure hope you like cheese too.

    Chicken Cordon Bleu can be made a number of different ways. The most common procedure involves stuffing or rolling a chicken breast with ham or prosciutto and some type of swiss cheese, then breading and cooking. That approach will work, but I’ve had issues with the cheese oozing out during cooking. I hate to lose even a bit of cheese. So, I’ve come up with a different way of making chicken cordon bleu. I roll prosciutto in chicken breast, bread it, brown it in olive oil until golden brown, and finish the cooking in the oven. While the chicken is baking, I make a basic white sauce, or bechamel sauce, and then melt in some tasty Gruyere swiss cheese. No cheese is lost in the cooking and you get a nice creamy sauce to drizzle over the chicken. And who doesn’t like having a sauce to dip in??

    On the side, we’re having green beans prepared my favorite way; sauteed in a bit of olive oil with sliced almonds and a sprinkle of salt. To make things just a smidgen easier, I buy the cleaned and cut fresh green beans, which can be microwaved right in the bag. I typically cook them for less than the recommend time, so they do not become mushy.

    Chicken Cordon Bleu

    Ingredients

    • 4 Chicken Breasts
    • 4-6 slices Prosciutto or Ham
    • 1/2 cup Flour
    • 2 Eggs, lightly beaten
    • 1 cup Seasoned Bread Crumbs
    • 4 Tbsp Olive Oil
    • Salt and Pepper

    For the Gruyere Sauce:

    • 1 Tbsp Butter
    • 1 Tbsp Flour
    • 1 cup Milk
    • Dash of Nutmeg
    • 1/4 tsp Salt
    • Pepper
    • 1/2 cup Gruyere (or other swiss cheese), shredded

    Directions

    Preheat oven to 375 degrees. Pound the chicken breast between plastic wrap until about 1/4 inch thick.

    Lay slices of prosciutto or ham on top of the flattened chicken breast. Roll the chicken and tuck in the ends. Season with salt and pepper. Roll each chicken roll in flour. Dip into the lightly beaten eggs. Then, roll in the bread crumbs until well-coated. Heat olive oil in a pan over medium heat. Place the chicken rolls in the pan and cook for a minute or two on each side, until lightly browned.

    Place the browned chicken into a baking dish. Place the baking dish into the oven and cook for about 20-25 minutes, until the chicken reaches an internal temperature of 165 degrees.

    Meanwhile, prepare the sauce. Combine butter and flour in a saucepan over medium heat. Cook for a couple minutes while stirring. It should have a paste-like consistency. This is your roux (roo) which will thicken your white sauce. Scrape the roux from the pan and set aside. Add milk to the pan and bring to a gentle simmer. Using a whisk, incorporate the roux into the milk until smooth. Simmer for a few minutes until the milk begins to thicken. Season with the nutmeg, salt, and pepper. Turn down the heat and add the shredded Gruyere cheese. Stir until melted and smooth.

    When the chicken has finished cooking, spoon some sauce over each chicken roll and serve.

    Green Beans Almondine

    Ingredients

    • 1 package Cleaned and Cut, Fresh Green Beans, steamed
    • 2 Tbsp Olive Oil
    • 1/2 cup Sliced Almonds
    • 1/4 tsp Salt

    Directions

    Heat the olive oil in a pan over medium heat. Add the almonds and salt. Cook for 2-3 minutes, until almonds just begin to toast. Add the steamed green beans. Use tongs to toss the beans in the oil and almonds.

    Cook for a minute or two. Taste and adjsut seasonings if desired.

    Chicken Cordon Bleu with Green Beans Almondine

    If you have any leftover chicken and sauce, it makes an amazing sandwich! Spread the leftover sauce on a ciabatta roll. Slice the chicken. Place the slices onto the roll. Sprinkle a little extra swiss cheese on top, if desired. Wrap it in foil and bake in the oven until heat through. Excellent!

    Roast Beef, Bleu Cheese and Caramelized Onion Panini

    I owe you an apology. I have no idea how I’ve gone through almost a hundred posts without making caramelized onions. I’m so sorry. It was neglectful, thoughtless, and downright irresponsible of me! I’m going to make it up to you today with a caramelized onion photo guide and an easy panini sandwich recipe featuring the sweet oniony goodness.

    Yesterday, after baking the first two loaves of peasant bread with rosemary, I decided to bake two more loaves, using honey instead of sugar, olive oil instead of butter, and a bit of sea salt instead of rosemary. Just because I like to play with food. Now we’ve got more bread than any family could need. This leaves me with a few options. I could freeze the bread, but that would take up space, which is at a premium in my freezer. I could try to find a poor wandering cathedral builder and his family to donate it to, but I haven’t seen one of those in years. Lastly, I could make sandwiches for dinner. Sandwiches it is!

    The large flat loaves of peasant bread scream panini to me. A panini is essentially a pressed sandwich, often grilled or toasted until hot and melty. You do not need any special equipment to make panini. A heavy pan or foil-wrapped brick will do the trick. You can toast the sandwich in a skillet or grill pan with the foil-wrapped brick on top to ‘press’ the sandwich. Flip the sandwich after a few minutes to toast the other side. Another alternative is to cook the sandwich on an actual grill with a heavy pan or foil-wrapped brick on top. Today, I’ll be wrapping my sandwich in foil, placing a cast iron skillet on top, and baking it in the oven until it’s hot and melty.

    You can use any type of bread for panini sandwiches, but something flat and dense will work best. Popular panini breads are ciabatta or focaccia. If you have the time, bake a couple loaves of my peasant bread recipe. It’s easy and delicious! You can fill your panini with any combination of meats, cheeses, spreads, and vegetables. My sandwich fillings were inspired by the leftover bleu cheese I had in the fridge. Bleu cheese got me thinking of roast beef, which led me to the caramelized onions. I’m also adding a bit of shredded mozzarella for flavor balance and extra meltiness.

    Roast Beef, Bleu Cheese, and Caramelized Onion Panini

    Ingredients

    • Roast Beef, thinly sliced
    • Caramelized Onions
    • Bleu Cheese, crumbled
    • Mozzarella Cheese, shredded
    • Loaf of flat, dense bread

    Directions

    Preheat oven to 375 degrees.

    Slice the loaf of bread in half.

    Place the roast beef in an even layer on the bottom half of the bread.

    Sprinkle caramelized onions on top of the beef.

    Sprinkle with bleu cheese crumbles.

    Sprinkle with some shredded mozzarella.

    Place the top half of bread on top.

    Tightly wrap the sandwich in foil.

    Place the sandwich on the middle rack of the oven. Place a heavy skillet or foil-wrapped brick on top.

    Bake for about 20 minutes. Then, unwrap and enjoy.


    Pan-seared Scallops with Pina Colada Salsa and Coconut Rice

    Many moons ago, my husband and I found ourselves in Italy, in the middle of a heat wave. The beautiful city of Rome is overflowing with fountains; cool, refreshing, swim-worthy fountains. Unfortunately, it’s also full of fountain police, whistles constantly in mouth, ready to blow at the first hint of a toe touching the water. When in Rome…don’t go in the fountains! Torture on such a hot day. But, sweet relief came in the form of little kiosks, selling big icy chunks of fresh, chilled coconut and iced bottles of water. I can still envision the towers of fresh coconut pieces, cool water running down over the artfully arranged displays. No coconut fountain police in sight. Sweet, sweet coconut relief.

    So, whenever the weather gets hot, I think about coconut. It’s definitely hot out there today! I think a little coconut is in order.

    Never hand your baby a coconut. He will assume that it's a hairy ball and will throw it at your knee. Trust me.

    Recently, my sister and brother-in-law posted pictures of a dinner they enjoyed at a fine restaurant on Skaneateles Lake. My sister had a juicy grilled pork chop with mashed potatoes, beets, carrots, and asparagus. The picture made me hungry. My brother-in-law’s selection didn’t have quite the same effect. The dish he ordered featured seared scallops alongside a bed of sautéed spinach and a strawberry pastry. Everything on the plate was drizzled in a bright pink sauce which looked like it was made of strawberry yogurt. I stared at the picture trying to make the dish work in my head. My brother-in-law said it was delicious and that the tart strawberries in the salty pastry complemented the sweetness of the scallops. Sounds sensible enough, but I’m still having a hard time with the dish. I love the combination of fruit and seafood, especially during the hot summer months. Strawberries with scallops makes sense to me. And, I like strawberries in spinach salad, so I guess that pairing makes sense too. I think my issue with the dish lies more with the creamy, sweet-looking sauce and the dessert-like appearance of the pastry sitting next to the scallops. But, what do I know??

    In any case, I must still have scallops and fruit on my mind, because as I was trying to come up with an interesting way to use the coconut I was craving, scallops dominated my thoughts. I tossed around the idea of somehow cooking scallops in the fresh coconut water, but I didn’t imagine a very nice texture resulting from that preparation. So I decided to pan-sear the scallops and combine the coconut with a bit of pineapple, orange, and lime for a pina colada inspired salsa. Not wanting to let any of the yummy coconut go to waste, I reserved the sweet coconut water to use in cooking the rice. The result was a light, fresh dinner on a hot summer day.

    Tending to the fresh pineapple and coconut take a little time, but it’s worth it. Though my vote definitely goes towards using the fresh fruits, you could easily substitute canned pineapple, mandarin oranges, and unsweetened shredded coconut for the salsa and canned coconut milk for the rice for a really quick, delicious summer meal.

    Pan-seared Scallops with Pina Colada Salsa over Coconut Rice

    Ingredients

    For the Scallops:

    • 1 pound Scallops
    • 1-2 Tbsp Olive Oil
    • Salt and Pepper

    For the Salsa:

    *To supreme an orange, cut off the top and the bottom. Place it on a hard surface and cut off the skin and pith. Then, use a paring knife or other sharp knife to cut out each orange segment between the membranes.

    Directions

    To prepare the salsa, combine all ingredients in a bowl. Mix to combine. Taste. Add salt and pepper, if  desired. Refrigerate until ready to serve.

    To cook the scallops, heat the olive oil in a pan over medium to medium-high heat. Pat the scallops dry and season with a little salt. Place the scallops in the pan. Let them cook for 2-3 minutes, without disturbing. Once they’ve formed a golden-brown crust, turn the scallops over. Cook for another 2-3 minutes, until fully cooked and translucent.

    Prepare the rice according the package directions, substituting fresh coconut water for part of the water. Throw in a couple small chunks of coconut for added flavor.

    Serve the scallops on a bed of the coconut rice and pina colada salsa.

    Chipotle Steak Quesadillas

    Remember when I told you to put the rest of that pureed chipotle in the freezer? You did that, right? Excellent! It’s time to take it out to defrost, because we’re making Chipotle Steak Quesadillas! No worries if you don’t have any pureed chipotle peppers hanging out in your freezer. Just pick up a can of chipotles in adobo (probably in the International section of your grocery store) and you’ll be ready to go. Rinse the chipotles, or not, and puree them in a blender or food processor. Store the unused pureed chipotle in your freezer. It’s great in dressings and marinades or as part of a chipotle butter.

    This is a super simple, yet incredibly satisfying meal! It requires very little in terms of ingredients and cooks fast. In the quesadillas, we’re using juicy skirt steak, seasoned with chipotle pepper, and held together with melty pepperjack cheese. Skirt steak is generally known for being one of the toughest cuts of steak, but I’ve honestly never encountered a tough skirt steak. When cooked quickly at high heat and cut against the grain, they are incredibly flavorful and practically fall apart. Good substitutes for skirt steak would be flank or hanger steak. On the side, we’re having a salad of sweet corn, avocado, red bell pepper and a bit of jalapeno pepper. This bright, refreshing salad is a cool balance to the heat of the quesadillas.

    Chipotle Steak Quesadillas

    Ingredients

    • 1 pound Skirt Steak, about 2 steaks
    • 2 Tbsp Pureed Chipotle Pepper
    • Salt
    • 8 Flour Tortillas
    • 2 cups Pepperjack Cheese, grated

    Directions

    Preheat broiler. Place the steaks on a baking sheet. Season with salt and rub each steak with about a tablespoon of pureed chipotle. Place in the oven, a few inches under the broiler. Cook for 8-10 minutes, until steak reaches a minimum temperature of 145 degrees. Remove the steaks and turn the oven down to 375 degrees. Allow the steak to cool for a couple minutes, then cut into small pieces. Arrange 4 of the tortillas on a baking sheet. Sprinkle about 1/4 cup of cheese onto each tortilla. Divide the steak onto the four tortillas. Sprinkle 1/4 cup more cheese onto the steak. Cover with the remaining 4 tortillas. Bake in the oven for about 8-10 minutes, until the cheese is melty and the tortilla begins to feel slightly hard. Remove from the oven and allow the quesadillas to cool for a couple minutes. (This will make them easier to cut.) Use a pizza cutter to cut each quesadilla into six pieces.

    *If desired, the meat can be cooked ahead of time and refrigerated until you’re ready to make the quesadillas.

    Serves 4

    Corn, Avocado, and Pepper Salad

    Ingredients

    • 1 cup Sweet Corn Kernels
    • 1 Avocado, diced
    • 1 Red Bell Pepper, ribs and seeds removed, diced
    • 1 Jalapeno Pepper, ribs and seeds removed, finely diced
    • 1 Tbsp Lime Juice

    Directions

    Toss the Avocado in the lime juice to prevent discoloring. Combine all ingredients. Refrigerate.
