Roasted Rack of Lamb with Cranberry Horseradish Relish

My husband and I almost didn’t make it to midnight this year. We were totally ok with missing the official beginning of the new year, in return for sleep; sweet, precious sleep. But, the baby had other plans. The littlest man start fussing somewhere around 11. By midnight, he was in my arms vying for the first kiss of the new year. I told him that his daddy always gets the first kiss. Baby love got the second.

Our New Year’s Eve celebrations are not nearly as exciting as they were in the past, but we wouldn’t have it any other way. No streamers, no crowded bars with inflated cover charges and subpar food, no need to call a taxi home…just calm, quiet, together. Perfect.

I made us a nice dinner after the kiddies were all tucked into bed; an incredibly simple roast rack of lamb over a cranberry horseradish relish with a big pile of roasted red potatoes. Notice the excess of potatoes and lack of a green veggie. Mmmm…potatoes! Totally overcompensating for the diet we knew we’d be starting the next day.

You may have noticed that I’m a bit of a minimalist when it comes to my recipes. It doesn’t take a lengthy list of ingredients or elaborate techniques to get great flavor when you’re working with fresh foods. The shopping list for this elegant meal is short (you’ve probably got most ingredients in your pantry) and it’s a cinch to pull together. Makes a great date night meal too…you might want to mark this one for Valentine’s Day!

Cranberry Horseradish Relish

Ingredients

  • 3 cups fresh cranberries
  • 1 cup pomegranate juice
  • 4 tablespoons honey
  • 3 tablespoons prepared horseradish
  • Black pepper, to taste

Directions

Combine all ingredients in a saucepan over medium heat. Bring to a simmer and cook, stirring occasionally, until all cranberries have burst and the sauce thickens, about 10 minutes. Season with black pepper, as desired. Cool to room temperature before serving.

Easy-as-Can-Be Roast Rack of Lamb

Ingredients

  • 1 rack of lamb, trimmed and bones Frenched
  • Salt and pepper
  • Olive oil

Directions

Preheat oven to 375 degrees. Trim off any excess fat or silverskin from the lamb. Season with salt and pepper. Heat a thin layer of olive oil in an oversafe pan over medium/medium-high heat. Place the lamb in the hot pan and sear for about a minute on each side. Then, place the pan in the oven and cook until it reaches your desired doneness. 15-18 minutes should give you a nice, juicy medium-rare/medium. Allow the rack to rest for about 5 minutes before slicing between the ribs.

Roasted Red Potatoes with Garlic

Ingredients

  • 2 pounds baby red potatoes, quartered
  • 2-3 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • Salt and pepper

Directions

Preheat oven to 375 degrees. Toss the potatoes in olive oil, garlic, salt, and pepper. Arrange in a single layer on a baking sheet. Bake for about 40 minutes. Use a spatula to occasionally turn the potatoes as they cook.

Meal Serves 2-4 People

Timesaving Tips:

  • Preheat the oven and prepare the potatoes first.
  • After the potatoes are in the oven, make the cranberry relish.
  • While the cranberry relish is simmering, trim and season the lamb.
  • Sear the lamb while the cranberry relish is cooling.
  • Place the lamb in the oven 20 minutes before the potatoes are done. The lamb will finish before the potatoes. Allow it to cool while you plate the cranberry relish and potatoes. Slice and plate the lamb last.

Asian Chicken Salad in Sweet Red Pepper

My boys are bringing back the ghostbusters for a new generation. It all started with a t-shirt my sister found for my three-year-old’s birthday. A t-shirt which she gifted along with the Ghostbusters I and II dvd set. Which, after watching with my overprotective mommy eyes,  I decided was a bit too spooky for my young boys who are still sorting out the difference between real and pretend. So, my sis went back to the store to grab the complete collection of The Real Ghostbusters, with its confusing title, since The Real Ghostbusters is actually the animated series…not very real, but whatever. I decided to allow the kids to watch the cartoon. That was all it took to convince them that they had to be ghostbusters for halloween.

Soon after halloween, the ‘edited for tv’ version of the movie aired. We caved and watched it as a family. And it firmly sealed the boys’ obsession, as they watched with wide eyes. This would have been a Christmas full of ghostbusters toys and gear, if only the rest of the kid and toy-making world were as obsessed with the ghostbusters as my little men now are. It’ll happen though. They’ve already got all their little friends at school asking about the ghostbusters.

But, even without a toy box full of ghostbusters goodies, talk of the ghostbusters reigns supreme in our home…talk of who’s going to be Egon and who’s Peter Venkman when they put on their costumes, whose proton pack packs more power, and who is going to really be a real ghostbuster when they grow up. Oh, and if you’re wondering where all the monsters have gone, according to my three-year-old, they’re in the containment unit. Of course.

Most recently, my four-year-old asked to call the ghostbusters on the phone. So, I sent a quick message to my sister (the one who started this whole obsession) explaining that her phone was about to ring and that when it does, she should answer the phone as the ghostbusters. I then handed the phone to my son and made the call. It was all giggles on my end the moment my sister answered the phone, with a perfect Janine Melnitz accent, Ghostbusters…whadda ya want? He knew it was his aunt on the phone, but he played along.

I love my little ghostbusters.

As I mentioned, I started the South Beach diet a few days ago, which means I’ve temporarily bid adieu to some of my favorite starches and sweet treats. I miss them. But for me, cutting them out for a few weeks is the best way for me to break some of my bad habits and get me started on the road to successful, lasting weight loss. The first couple weeks on South Beach are also really effective in teaching me to appreciate the beauty of other flavors I often pass up for things like chocolate and buttered bagels. Like sweet red peppers. My goodness, you would have thought I was eating candy with the way I oohing over a crisp, super sweet, red pepper yesterday. Then I made this chicken salad for dinner, which is absolutely bursting in delicious flavors and textures. And I stuffed it into a crisp red pepper. I barely even missed the doughy bread I would have normally eaten this chicken salad on. Nothing makes weight loss easier than enjoying truly delicious and nutrition-packed food!

Asian Chicken Salad

Ingredients

  • 2 red bell peppers
  • 1 pound (approximately) chicken, cooked and torn into small pieces*
  • 2/3 cup dry-roasted cashews, coarse chopped
  • 3 green onions, chopped
  • 3/4 cup bean sprouts, divided
  • 1/2 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1 1/2 teaspoons fresh ginger, grated
  • 1 1/2 teaspoons garlic, minced
  • 1-2 teaspoons sambal oelek (crushed red chile paste)**

*I poached a few chicken tenderloins, but chicken breast or even leftover roast chicken would work just as well.

**Can substitute ground cayenne pepper, to taste

Directions

Combine the chicken, cashews, green onions, and 1/2 cup of the bean sprouts in a bowl. Rinse the red peppers. Cut the tops off of each pepper, then cut each pepper in half. Set the pepper halves aside for serving. Finely dice any of the red pepper remaining around the stem and add it to the chicken mixture. In a small bowl, stir together the mayo, soy sauce, ginger, garlic, and sambal oelek. Pour the dressing over the chicken mixture and stir to combine. (You may not need all of the dressing. Add gradually.) Serve the chicken salad in the pepper halves over a bed of lettuce.

Steak and White Cheddar Panini with Garlicky Potatoes Au Gratin

Happy New Year, my friends!!

Like millions of other people, I’m resolving to lose weight and live healthier in this new year. I know…such a predictable resolution! But, I’ve got at least 20 (ok, probably more like 30) pounds of extra weight still hanging around since giving birth to our third little love almost eight months ago. I’ve been making all sorts of excuses (some quite valid and some more of a stretch) for why I haven’t lost the weight yet. I was hoping it would just go away, but it’s become clear to me that it’s time to stop dragging my feet and to get proactive.

When it comes to achieving and maintaining a healthy weight, my approach has always been one of balance. Eat mostly nutritious and unprocessed foods, enjoy a few indulgences, balance the indulgences with exercise. It’s an approach which has always worked well for me and makes good sense as a long-term plan. But, at this particular point in time, I feel that I need something with a few more ‘rules’ to get me jump-started on the right path.

So, beginning today, I’ll be following the South Beach diet, slightly modified (as I am still breastfeeding our baby and the first phase of South Beach is a bit too restrictive for a nursing mom). My husband and I have done the South Beach diet in the past and there are many things I like about it. It’s often confused for being a low-carb diet, but that’s a misconception. The South Beach diet is more of a good-carb diet. It’s a diet full of lean proteins, healthy fats, fresh fruits and veggies, and whole grains. It makes me feel good to eat this way. In many ways, it’s the way most of us should be eating anyway.

South Beach is a diet with guidelines, rather than a detailed plan; guidelines that teach you to choose foods which keep you feeling fuller longer and keep your blood sugar levels more stable in order to avoid the inevitable cravings and overeating which result from rapid peaks and plummets in blood sugar levels. Feeling more satisfied naturally makes it easier to eat less and lose the excess weight. (I like that part!)

My main gripe with the South Beach diet is in its suggestion to use artificially sweetened products and other processed food substitutes, particularly during the restrictive first phase of the diet where even fresh fruit is off-limits. I get the point, but personally, I’d rather enjoy real foods more sparingly than start introducing food substitutes like sugar-free jello and artificial ‘buttery spreads’ into my diet. So, I’m going to skip the recommended sugar-free snacks and stick with a smidgen of real butter when I need it.

You may be wondering what my new ‘diet’ means for this blog. Well…nothing, really. My little space here is not about to become a diet blog or a South Beach resource. Quite simply, this will continue to be a place to share my love of cooking delicious food. You can still expect to see all sorts of simple and crave-worthy recipes…just maybe a bit more broiled fish and roasted veggies in between the macaroni and cheese and triple chocolate cake.

Well, it’s really official now…put in writing for accountability’s sake. I’m starting a diet. I will stay focused. I will lose this weight.

But before we embark on our healthier diets, I had to splurge a bit…have something completely indulgent (in addition to diligently finishing off the leftover Christmas cookies). With that, I give you garlicky potatoes au gratin and a cheesy flank steak panini sandwich, loaded with horseradish butter and sweet caramelized red onions on a doughy loaf of French bread. This meal is worth a little extra time on the treadmill!

Garlicky Potatoes Au Gratin

Ingredients

  • 3 pounds Russet Potatoes, peeled and thinly sliced
  • 1 tablespoon butter
  • 1 garlic clove, smashed
  • 2 cups half and half
  • 4-5 cloves garlic, finely minced or grated
  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon salt
  • Pepper
  • 1 cup gruyere cheese, shredded

Directions

Preheat oven to 375 degrees.

Rub 1 tablespoon of butter around the bottom and sides of a medium-sized baking dish. Rub the smashed clove of garlic in the butter. Arrange the potato slices, lying flat, in the baking dish. In a saucepan, heat the half and half, garlic, parmesan cheese, salt, and pepper, until it begins to bubble. Allow it to bubble gently for a minute or so. Pour the mixture over the potatoes. Give the baking dish a little shake and press down gently on the potatoes to ensure the potatoes and sauce of evenly dispersed. Sprinkle the gruyere cheese on top.

Bake for about 55 minutes.

Steak and White Cheddar Panini

Ingredients

  • 1 pound flank steak
  • Salt and pepper
  • 5 tablespoons butter, divided
  • 1 red onion
  • 2 tablespoons prepared horseradish
  • 1 1/2 cups aged white cheddar, shredded
  • 1 loaf French bread (batard or baguette)
Directions
For the steak: Preheat oven to 450 degrees. Place the steak on a baking sheet. Sprinkle with salt and pepper. Bake for about 20 minutes or until it reaches your desired doneness. Allow the steak to rest for a few minutes before slicing. Slice into thin strips. Set aside.
For the caramelized onions: Heat one tablespoon of butter in a pan over medium heat. Add the onions. Cook for about 15 minutes, stirring frequently, until sweet and tender. Set aside.
For the horseradish butter: Melt the butter in a small bowl. Add the horseradish. Stir. Place the bowl in the refrigerator. Every few minutes, stir the butter. Continue checking and stirring until the butter has become firm enough to be spreadable. Remove from the refrigerator.
To prepare the sandwich: Preheat oven to 400 degrees. Cut the French bread in half lengthwise. Press down on the top of the loaf to flatten the bread. Spread the horseradish butter on both halves of the bread. Arrange the steak on the bottom half of the bread. Scatter the caramelized onions on top of the steak. Generously sprinkle with the white cheddar. Place the other half of the bread on top. Tightly wrap the sandwich in foil, pressing down as you wrap.
Place the wrapped sandwich in the oven. Place a heavy, oven-safe pan (or a brick wrapped in foil) on top of the sandwich to keep it flattened as it cooks. Heat the sandwich for about 20 minutes or until all components are warmed and the cheese is melty.

Fresh Green Bean Casserole

Back in the day, we wrote actual letters to Santa. We’d drop our carefully crafted wish lists into the post box and hope for the best. Nowadays, Santa has e-mail and a facebook page. He checks Amazon.com to learn of each little girl and boy’s greatest wishes and he uses his webcam to compose personalized video messages for tech savvy toddlers. And if that weren’t enough, Santa now deploys an army of tiny felt-dressed elves to maintain constant creepy surveillance in our homes. My, how times have changed! But ultimately, all kids are just hoping to end up on the nice list and to receive that special item from their wish list.

As a kid, I repeatedly wished for the Barbie Dream House; the one like my cousins had. Heck, I would have settled for the Barbie Camper, ’cause that was also pretty sweet. I never actually received either of those items. Ahem, Santa! Like many young boys, my husband’s childhood wish was for a Craftmatic adjustable bed. And though he’s certain he was on the nice list (at least some of those years) he never received that Craftmatic bed. I’m sure Santa had his reasons.

Like most parents, I have every desire to make my children’s Christmas wishes come true. Their delight is my delight. But, I can not bring myself to purchase one of the items on my four-year-old’s wish list. The item whose features (squeamish, beware) are described as:

  • Create your own delicious treats!
  • Eat bubbling brains and zombie skins
  • Inject spiders into the eyeballs
  • Watch the Zombie’s jaw rip open as it pukes out a brain barf beverage
Seriously. Go ahead and read that last part again. I couldn’t make that up if I tried. Boys are gross. How about some nice Legos instead?
But enough disgusting zombie talk. Let’s talk Christmas dinner. For many families, green bean casserole is standard fare for Thanksgiving and Christmas feasts. My family was not one of those families. But it became part of my tradition once I started spending the holidays with my husband’s family. The crispy onion straws had me at hello.

My version of a classic green bean casserole tastes much like the canned cream of mushroom variety found on many holiday tables. Only my version is made from scratch with fresh, delicious ingredients. It’s hardly any more work and the result is noticeably fresher and more vibrant. The dish can be mostly prepared a day ahead of time, making it super easy to pop in the oven on Christmas day!

Fresh Green Bean Casserole

Ingredients

  • 1 1/2 pounds green beans, lightly steamed and cut into halves or thirds
  • 3 tablespoons butter
  • 1 shallot, finely diced
  • 2 cups baby bella mushrooms, sliced
  • 3 tablespoons flour
  • 2 cups milk
  • 1/3 cup parmesan cheese, grated
  • 1/4 -1/2 teaspoon salt
  • Pepper
  • Homemade crispy onions straws*

* Click HERE to see the Pioneer Woman’s step-by-step guide to making crispy onion straws. Her procedure calls for a candy thermometer. And while a candy thermometer would be useful, it is not necessary. Just give the oil several minutes to get really good and hot. Then, test a very small batch of onions. The oil is hot enough when the coated onions bubble frantically and quickly become golden brown and crispy. The onions can be made a few days ahead of time and stored in an airtight container. They will loose some of their crispiness in the container, but will re-crisp nicely when baked on the casserole!

Directions

Preheat oven to 375 degrees.

Place the steamed and chopped green beans in a large casserole dish. Set aside.

Heat butter in a saucepan over medium heat. Add the chopped shallot and mushrooms. Cook for about 5-7 minutes until they are tender and golden. Sprinkle the flour on top of the mushrooms. Stir and cook for an additional minute. Gradually whisk in the milk. Bring to a simmer and cook for 2-3 minutes, until the mixture begins to thicken. Reduce the heat. Add the parmesan cheese, salt, and pepper.

Pour the mushroom sauce over the green beans, then give the dish a little shake to help the sauce settle over the beans. Top the mixture with the crispy onion straws and bake for about 20-25 minutes until bubbly hot.

**You can prepare the dish ahead of time up to pouring the sauce over the green beans. Then, cover and refrigerate until preparing to serve. When reheating, allow the beans and sauce to bake for about 10-15 minutes before topping with the crispy onion straws. Once you’ve added the onions, give it another 15-20 minutes to finish baking.

Favorite Thanksgiving Ideas

Hard to believe Thanksgiving is less than two weeks away. I’d better get my butt in gear and start preparing.

To be honest, I’d been struggling to come up with new Thanksgiving recipes to share with you. I’m just really in love with my standard Thanksgiving dishes. It’s a menu that’s evolved over the past several years and in my mind, it’s the perfect Thanksgiving feast. But, as my husband reminded me, Thanksgiving is very much about tradition.

So, this Thanksgiving, we will be enjoying what has become our traditional Thanksgiving feast, but I have come up with a few new ideas to share. Over the next two weeks, keep your eyes out for a Pumpkin Vanilla Custard, How to Make an All-Butter Pie Crust Photo Guide, Spiced Pumpkin Wontons, From-Scratch Green Bean Casserole with Homemade Crispy Onion Straws, Garlicky Creamed Spinach, a fun twist on a classic Apple Pie, and Braised Turkey Drumsticks.

Yikes! Ok…it’s probably unrealistic that I’ll be able to get all of that posted before Thanksgiving. But I’m gonna give it an honest effort. Let me know if there’s anything in that list you’re especially interested in seeing and I’ll try to prioritize that post.

Remember when I thought I didn’t care for soup? Then, remember when I woke up and discovered the glorious world of soup?

What a difference a year makes!

This new world is so much warmer than the old soupless world I was living in.

I like it here. I think I’ll stay.

Here’s a new favorite soup for you. It’s a creamy mushroom soup, kicked up with a punch of bacon flavor. (And bacon makes everything better, right??) Pureeing a bit of the broth and mushrooms helps spread delicious mushroom flavor throughout the soup. It’s seriously yummy. Even my mushroom adverse husband enjoyed this one!!

Creamy Mushroom and Bacon Soup

Ingredients

  • 8 slices bacon, chopped
  • 2 shallots, finely diced
  • 4-5 cups button mushrooms, quartered
  • 1 teaspoon garlic, minced
  • 2 teaspoons fresh rosemary leaves
  • 4 tablespoons flour
  • 4 cups chicken broth
  • Splash of Marsala wine (optional)
  • 1/2 cup half and half
  • 1/2  – 3/4 teaspoon salt
  • Pepper

Directions

In a large saucepan or dutch oven pan, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside. Add the diced shallots to the bacon grease and cook for about 3 minutes, until tender. Add the mushrooms, rosemary and garlic to the pan. Cook for about 5 minutes, until the mushrooms are tender and golden. Return the cooked bacon to the pan.

Sprinkle the flour over the mushrooms and bacon and stir to coat. Cook for about 1 minute, stirring constantly.

Pour the chicken broth into the pan. If desired, add a splash of marsala wine. Stir to combine. Bring the mixture to a simmer, stirring frequently. It should begin to thicken as it simmers. Simmer for a few minutes, then reduce heat and add the half and half.

Remove about a cup of the soup. (Make sure to get lots of mushrooms in there.) When cool enough to safely handle, blend the cup of soup until smooth. Return the blended mixture to the pan with the rest of the soup.

Season with the salt and pepper.

Serve topped with croutons and/or bacon crumbles.

Serves 4

Italian Wedding Soup

I’m about to eat my words.

“I guess I just don’t really think too much about soup. I never crave it. I rarely get the itch to make it. ” – Me, October 26, 2010

Well, I’ve changed my mind. A girl’s allowed to change her mind, right?? I think about soup all of the time lately. I crave soup frequently. I always have the itch to make it. In fact, I can barely think of anything more comforting on a chilly autumn day than a bowl of soup; a creamy pumpkin bisque, savory chicken noodle, or spicy sausage and bean. I love them all.

While I’m busy eating my words, I might as well admit that my lifelong, passionate distaste for Rod Stewart has been gradually waning. Rod Stewart, the thought of whom used to give me unpleasant shivers. I now find myself singing along to his songs on the radio. I may have even raised the volume once or twice. What’s happening to me?

I’m swimming in soup this week as I prepare for our littlest guy’s upcoming baptism. I’ll be serving a menu of soups, salad, and assorted breads. There will be a Roasted Pumpkin Caramel Bisque, a Sausage, Bean, and Rapini soup, a Spicy Beef Chili, and this Italian Wedding Soup.

Italian wedding soup is typically composed of a chicken broth with meatballs, leafy greens, and pasta. It’s a simple, but perfectly married combination of flavors. I start my soup with a homemade chicken broth. You can skip this step and use prepared chicken broth to save a whole bunch of time. But, if you make the broth from scratch you’ll have the added benefit of enough cooked chicken to make meals for the rest of the week! Totally worth the small investment in time!

Italian Wedding Soup

Ingredients

For the broth:

  • 2 whole chickens
  • 2 cups carrots, coarse chopped
  • 1 head celery, coarse chopped
  • 2 onions, quartered
  • 6-8 cloves garlic

For the meatballs:

  • 1 pound ground chicken
  • 1 pound ground pork
  • 2 eggs
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup parmesan cheese
  • 2 teaspoons garlic, minced
  • 2 teaspoons parsley
  • 2 teaspoons salt
  • Pepper

For the soup:

  • 3-4 teaspoons salt
  • Pepper
  • Splash of hot sauce
  • 12 ounces baby spinach, coarse-chopped
  • 1 pound small pasta (ditalini or orzo)

Directions

To prepare the broth, place two whole chickens into a very large pot (12-16 quart stockpot). Add carrots, celery, onions, and garlic. Add enough water to cover an inch or two above the chicken and veggies. Bring to a simmer and cook, covered, for about 3.5-4 hours. When cool enough to safely handle, use a slotted spoon to remove most of the chicken and veggies. Pour the remaining mixture through a fine-sieve strainer. Save the chicken for other uses (salads, quesadillas, chicken salad, pasta dishes). Discard the vegetables. Transfer the broth back to the pot and bring to a boil. Boil, uncovered for 20-30 minutes to reduce the liquid and concentrate the flavor. Allow to cool. Use a spoon to skim some of the fat from the surface of the soup. (If desired, you can cool the broth completely in the refrigerator to easily remove the excess fat, which will rise and harden on the surface of the broth. This is not a necessary step, but is the most effective way to remove the fat.) Reserve 16 cups of the broth for the soup. Freeze any remaining broth for other uses.

To prepare the meatballs, combine all meatball ingredients until well-blended. Roll the mixture into 1 inch balls. Bake on a baking sheet for about 20 minutes at 375 degrees.

To prepare the soup, bring 16 cups of the full-flavored broth to a simmer. Add salt and pepper, as desired. About 3-4 teaspoons of salt should do the trick. (Store-bought broth, which has already been salted, will require less salt. Taste as you go to prevent over-salting the broth.) Add a splash or two of hot sauce, as desired. Add the meatballs and spinach. Simmer until the spinach wilts. In a separate pot, cook the pasta for 2-3 minutes less than directed. (It will finish cooking in the soup.) Strain, then add the slightly under-cooked pasta to the hot soup.

The time in elementary school when one of my best friends took the opportunity to announce my crush to the entire class. Amy likes Anthony, my pal announced to her fully-attentive audience, leaving me red-faced and fumbling for words. If only I could have come up with some clever retort, like So’s your face or Your mama dresses you funny! Except that we all wore matching plaid uniforms… You can bet I kept my crushes to myself after that.

2. The time in high school, when, during a class exercise involving a map of Europe, I replied “Switz” in response to a question about SwitzERLAND. Hey…it said Switz on the map and none of the other countries were abbreviated. I wanted to crawl into a hole when the teacher responded, “Switz? Do you mean Switzerland?” Ummmm, yeah. The correct answer would be Switzerland…not the mysterious land of Switz; home to Switz cheese and Switz watches!

3. The time in college, when I discovered I’d been walking down Main Street with the back of my skirt tucked into my pantyhose. Yes, that really happens…to me, apparently. I only discovered my wardrobe malfunction after trying to decode the odd looks I’d received from my employer, who’d been standing on the porch of  the local bar and restaurant I’d worked at, as I passed by with my tushie on display. For goodness sake, quit ogling and tell a modest girl she’s half dressed in the middle of town!

Oh, and did I mention that I started high school with a face covered in poison ivy? Yeah, for real.

I was never meant to be one of the cool kids anyway. If I were a food, I’ve always been more of a lima bean than a cupcake. I like unicorns, cried at the end of Battlestar Galactica, and won a bridge-building contest in my honors physics class (cause I’m cool like that). I trip over my own feet with concerning frequency and somehow manage to miss my mouth while drinking, more than I’d like to admit. I’m a clutz, a germaphobe, and a neat-freak.

It’s ok. I happen to like lima beans.

Knowing what you know now, are you sure you still want to hang out with me? Would you still like me if I told you that seeing the Christmas decorations currently on display in my local Target makes me giddy with excitement? There is no too early for Christmas stuff in my book. It’s coming and I can’t wait. And somewhere in between now and my favorite holiday, there will be Thanksgiving!

If you’re having a hard time waiting for that Thanksgiving meal, try this tasty burger on for size! The patty combines all the flavors of the turkey with the stuffing. Served on a doughy potato bun and topped with gravy and cranberry sauce, this turkey burger (with a twist) gives you a burst of Thanksgiving flavor with every bite!

Thanksgiving Burger

Ingredients

  • 1 pound ground turkey
  • 1/2 pound bulk breakfast sausage
  • 1/3 cup celery, finely diced
  • 1/3 cup leeks, finely sliced *
  • 1/2 cup dried apples, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon poultry seasoning
  • Fresh ground pepper
  • 6 potato buns
  • Turkey gravy, homemade or store-bought
  • Cranberry sauce (jellied or whole berry), homemade or store-bought

Directions
Preheat oven to 425 degrees. Using your hands, combine the turkey, sausage, celery, leeks, apples, salt, poultry seasoning, and pepper until well blended. Form into six patties. Place the patties onto a lightly greased baking sheet (a little vegetable or olive oil will do the trick). Cook for about 12 minutes, until fully cooked (internal temp of 165 degrees). Place each cooked patty onto a potato bun. Top with warmed gravy and cranberry sauce.

Roasted Pumpkin Caramel Bisque

I have a gray hair. One gray strand, on my otherwise brown head of hair.

I must be getting old.

It grows in. I pull it out. It grows in again. I pull it out again.

I’m not trying to abolish the nasty offender. I just want to take a closer look. It intrigues me. It’s a shimmery white.

Perhaps I’ll feel differently when that lonely strand of hair starts gathering friends, but for now I’m content to let my hair turn whatever shade of gray, silver, or white it chooses to be.

I’m quite comfortable with my age. I’m as comfortable to be turning 35 as I would be to turn 25. In fact, I might even like 35 better.

I’m comfortable with that gray hair on my head.

I’m comfortable with me (though I’d be even more comfortable with twenty pounds less of me).

Comfort is good.  It’s like a warm, cashmere sweater; one that’s three sizes too big so you can snuggle up within its soft embrace. Comfort is molten dark chocolate. It’s a warm, crackling fire. Comfort is this creamy roasted pumpkin caramel bisque. It’s slightly sweet, warm, and smooth. It smells like autumn and feels like a hug. Seriously…a great, big, warm hug.

Roasted Pumpkin Caramel Bisque

Ingredients

  • 2 pie pumpkins (3-4 pounds each) or about 7-8 cups canned pumpkin puree
  • 2 tablespoons butter
  • 1 medium onion, finely diced
  • 4 cups vegetable stock
  • 2 cups half and half
  • 1/2 teaspoon cinnamon
  • Dash of nutmeg
  • Salt (about 3 teaspoons)
  • 1/2 cup prepared caramel sauce/dip
  • A few dashes of cayenne pepper, to taste

Directions

To roast the pumpkins – Preheat the oven to 375 degrees. Cut the pumpkins in half and scoop out all of the seeds and stringy pulp. Place the pumpkins cut side down on a baking sheet. Fill the baking sheet with about 1/4″ water. Bake for about 90 minutes, until tender. Allow to cool, then scoop out the tender insides. You should have about 8 cups of roasted pumpkin. To prepare the soup, heat butter over medium heat in a large saucepan. Add the onions and cook for about 10 minutes, until tender and golden. Add the roasted pumpkin (or pumpkin puree) and vegetable stock to the pan.

Use an immersion blender to blend the mixture until smooth or transfer the mixture in small batches to a blender or food processor to blend. Return the blended mixture to the saucepan and heat to a simmer. Stir in the half and half, cinnamon, nutmeg, and salt. Add the salt gradually, to taste. Gradually stir most of the caramel into the soup, reserving a spoonful or two for garnish. (Taste as you go. The soup should be savory and slightly sweet.) Season with a few dashes of cayenne pepper, as desired.

Garnish with a drizzle of caramel and pumpkin seeds or top with crunchy croutons.

Makes a huge batch of soup…plenty for freezing!

How to Prepare Fresh Pumpkin

Welcome, October! Quite possibly my favorite month of the year. Well, maybe except for December.

Because December means Christmas. And Christmas makes me burst with happiness.

But October means beautiful changing leaves, my birthday, Halloween candy, warm sweaters, soft hoodies, and pumpkins; lots and lots of pumpkins!

As I write, there are a few pumpkins roasting in the oven, making my home smell like autumn. I’m working on a new pumpkin recipe today. Think fresh, roasted pumpkin with rich cream, and perhaps a touch of caramel. Oh, and it’s not a dessert! Look for it later this week.
