Ginger Peach Sangria

This week will forever be known as the week we got the windows replaced, the week we toured the Syracuse public restrooms, and the week mommy officially lost her mind.

It’s hard living the gypsy life with three very young children in 95 degrees weather. Even the fun adventures I’d planned to keep everyone engaged have gone wildly awry. Who even knew it was possible to not have fun while enjoying a picnic at a beautiful park on a sunny day with bubbles and a gigantic bouncy ball??? I’m here to tell you that it’s entirely possible.

In fact, the best part of today was the hour I drove the kids around in our air-conditioned Honda Pilot while two out of the three napped and the third watched Up on our second row DVD entertainment system. Did you know that gypsies drive well-equipped Honda Pilots?

To say that this has been a tiring week is an understatement. The level of exhaustion involved in caring for an extremely active preschooler, a potty-training toddler, and a breastfeeding newborn everyday, for an entire week, from the trunk of my car, is overwhelming. It’s akin to having taken the three of them through Disneyworld on a hot summer day, by myself, only a heck of a lot less fun. We’ve tried to make the best of a tricky situation, but it’s been tiring for us all.

The weather is expected to hit nearly 100 degrees tomorrow. I’m planning to keep the kids in the air-conditioned mall most of the day, since the outdoor activities I’d planned for today were such a bust. The new windows are almost completely installed. I think we’re going to make it through this odd week (with sanity partially intact).

In the mean time, mommy needs a drink. An iced cold drink. Something of the adult beverage variety. How about an icy pitcher of ginger peach sangria??

Yes, please!

Ginger Peach Sangria

Ingredients

  • 1 cup water
  • 1/3 cup sugar
  • 1 tablespoon fresh ginger, very finely grated
  • 3/4 cup peach schnapps
  • 1 tablespoon lemon juice
  • 1-2 white peaches, chopped
  • 1-2 granny smith apples, chopped
  • 1/2 cup blueberries
  • 1 large (1.5 liter) bottle Pinot Grigio or other dry white wine

Directions

Combine the water, sugar, ginger, and lemon juice in a saucepan. Bring to a simmer. Stir until sugar is fully dissolved. Remove from heat and allow the liquid to cool to room temperature. Add the peach schnapps and the fruit. Transfer the mixture to a pitcher and refrigerate for at least one hour or overnight. Add the white wine. Refrigerate until well-chilled. Pour over ice.

Strawberry Spinach Smoothies

Obsession, thy name is Strawberry Spinach Smoothies.

I honestly can’t quantify the amount of fresh baby spinach my family has consumed over the past two weeks. We are a family obsessed. It would probably behoove Popeye to snatch up whatever remaining spinach he can get his hands on, before my family calls dibs on every last green leaf. I suppose there are worse things to be obsessed with.

It all started with the Strawberry Basil Smoothie recipe I recently shared. While adding the bright green basil, it occurred to me that a bit of spinach might be a nice match to the ripe summer strawberries.

So, as soon as I was able to get my hands on some spinach, I set about making my first ever strawberry spinach smoothie. I started with just a small handful of spinach. A quick taste led to another handful. Another taste, another handful. Turns out that these smoothies can easily handle a full bag of fresh baby spinach without sacrificing any of the sweet strawberry flavor.

Now, admittedly, adding vegetables to a smoothie is not an insanely novel idea, but it’s one I hadn’t tried before and I just had to share the recipe with you! These smoothies are so insanely nutritious and delicious, you won’t be able to stop smiling. You’ll smile even wider while watching your young picky eaters happily gulp down massive quantities of fresh, spinachy goodness.

Strawberry Spinach Smoothies

Ingredients

  • 3-4 cups frozen strawberries
  • 6-8 cups baby spinach
  • 1 cup Greek yogurt
  • 2 tablespoons honey
  • 1/2 cup apple juice, milk or water

Directions

Blend all ingredients until smooth and frosty. Enjoy!

**Tips**

Buy and freeze plenty of strawberries now, while they’re in season and priced low.

Freeze your strawberries on a baking sheet before placing in a container to help prevent them from sticking together.

Chop large strawberries before freezing to make things easier on your blender.

Freeze leftover smoothie mixture in ice cube trays. Blend your frozen smoothie cubes with a splash of juice when you’re ready to enjoy!

This recipe is fully customizable. Have fun playing around with different combinations of fruits and vegetables!

Strawberry Cheesecake Ice Cream

It takes a lot for a non-chocolate dessert to excite me. It’s got to be something pretty special. Even still, I usually feel chocolate’s absence. I must admit that when I put this recipe together, I tried to rationalize a place for chocolate. I almost threw in a handful of chocolate chips, for good measure.

But I would have been wrong to add the chocolate. This luscious ice cream, with the rich taste of a slice of strawberry cheesecake, does not need a stitch of chocolate. It’s true. It’s perfectly decadent as it is. So deliciously decadent that I’ve been battling with the little angel and devil on my shoulder about whether I should exercise a bit of self-control or simply surrender and finish every last bite for breakfast.

Is there any better way to welcome summer than with some homemade ice cream made with hand-picked berries?? I think not.

Go ahead. Indulge.

Strawberry Cheesecake Ice Cream

Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup sugar*
  • 1 cup sour cream
  • 1 cup light cream
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons vanilla
  • 2 cup fresh strawberries, halved if large
  • 1 cup graham crackers, broken into small pieces
*Use more or less sugar, as desired, depending on the sweetness of your berries.

Directions

In a large bowl, beat together the cream cheese and sugar until creamy. Add the sour cream, cream, lemon juice and vanilla. Beat until smooth. Add the strawberries and beat until the berries mostly break up, leaving a few delicious chunks. Refrigerate for about an hour. Pour the mixture into your ice cream maker and freeze according to your machine’s directions. Add the graham crackers during the last 5-10 minutes of freezing.

Strawberry Basil Smoothie

It takes a while for strawberry season to peak this far north. When it does, we like to take the little men out to the fields for some berry-picking family fun. Ideally, we would put all of their little hands to work at picking a bulk quantity of sweet, ripe berries. The reality was that my husband ended up picking 10 pounds of strawberries while the boys wandered the fields dining on an all-you-can-eat buffet of fresh-picked berries. It’s a good thing my husband enjoys picking berries!

I promptly washed and froze half of our berry loot for one of my sons’ favorite treats in whole world…smoothies! They go absolutely bonkers over smoothies. I’m thinking about sneaking some veggies in the next time; perhaps making a strawberry spinach smoothie. But, for today, we’re just going to accent our sweet berries with a touch of fresh, summery basil!

When it comes to making smoothies, I prefer to skip the ice. I don’t care for the texture or the watered-down taste. To achieve an equally thick, frosty smoothie without the ice, simply freeze your fruit. Combine your frozen fruit with a bit of creamy Greek yogurt, a touch of honey, and a few leaves of fresh basil for a delicious and nutritious treat!

Strawberry Basil Smoothies

Ingredients

  • 2 1/2 cups fresh strawberries, frozen
  • 3/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 5-6 large basil leaves
Directions
Blend all ingredients until smooth. Easy as that.

Strawberrylicious Round-Up

Strawberry season has finally hit its stride in our neck of the woods. I foresee an afternoon of berry picking (and berry tasting) in our near future. I’m also predicting that the ice cream maker may find its way out of storage for this season’s inaugural batch of sweet, creamy goodness.

Thankfully, the temperatures have finally started to rise around here, allowing us some much-awaited walks and outdoor playtime. After living in two urban areas, where most of our needs could be met within a few minutes walk, I can’t even begin to express the value I place on our proximity to a well-stocked, walking-distance grocery store in our current suburban neighborhood. Had I never become accustomed to walkable grocery access, it might not matter so much. But to me, our ability to walk to our grocery store is worth more than any other feature of our home.

Once walk-friendly weather arrives, daily trips to the grocery store become part of our routine. I plan our meals in the morning. Then, the kids and I walk down to the store to gather the ingredients. It’s practically like living in Provence, making daily trips to the outdoor market for freshly picked produce, meats, and fine cheese! Well…maybe not quite like Provence, but we’ll take what we can get!

So, on a recent bright, sunny, morning, the boys and I set out for our grocery walk. My four-year -old had suggested chicken salad for dinner. The addition of tropical fruit flavors was my contribution to the dish. Not only do the sweet fruits add a delicious accent to our salad, but tropical fruits, such as the pineapple, mango, and kiwi I selected, contain an enzyme which has been shown to help prepare a woman’s body for labor. And at this point, barely a week from my due date, I’ll gladly give nature a helping hand.

I hadn’t initially planned for this meal to become a family cooking activity. The boys were happily playing in the living room when I began cooking. But, as soon as my little men caught the sight and smell of the fruits, they were at my side like glue, begging bits of mango and pineapple. Moments later, they were asking to help with “the steps”. So, after a quick trip to the sink to wash their hands, my little chefs joined me in the kitchen.

This recipe is ideal for young chefs of any age. Older chefs can prepare the entire dish independently, from start to finish, especially if you start with precooked chicken. Younger chefs will need more support, but with child-safe cutting tools, there are plenty of ways for them to get involved. Chopping fruits, measuring ingredients, and mixing are ideal activities for little chefs. It’s also a great opportunity to taste new fruit flavors, which may be less familiar than the more common apples, bananas, and berries many kids are accustomed to.

Tropical Chicken Salad

Ingredients

  •  2 1/2 cups cooked chicken, chopped or shredded*
  • 2 green onions, sliced
  • 1/3 cup mayonnaise
  • 1/4 cup dijon mustard
  • 1/2 cup salted cashews, coarse chopped
  • 1 kiwi, diced
  • 1/2 cup mango, diced (Click here for my photo guide on How to Dice a Mango)
  • 1/2 cup pineapple, diced (Click here for my photo guide on How to Chop a Pineapple)
  • Salt and cayenne pepper, to taste
*You can use pre-cooked chicken, packaged or pulled from a rotisserie chicken. Alternately, you can cook boneless, skinless chicken breasts by placing them in a pot of water, bringing to a boil, and simmering for approximately 10-15 minutes, until cooked through.

Directions

Combine the chicken, green onions, mayonnaise, mustard, and cashews in a large container. Stir until well blended. Gently fold in the fruit. Season with salt and cayenne pepper, as desired. Refrigerate until serving.

Serve on doughy bread with avocado, if desired.

Quadruple Berry Muffins!

Have you seen my belly lately?? It’s seriously impressive. I suppose that is what happens when you’re a month away from expecting your third baby! A belly this big requires plenty of delicious treats. And these muffins totally fit the bill! These quadruple berry muffins are bursting with all of the sweet flavor and delicious nutrition you’d expect from fresh berries and yogurt.

Yes, you caught that right… QUADRUPLE Berry Muffins! We don’t mess around with plain old blueberry muffins ’round here. Our muffins are exploding with the flavor of four different berries. A sweet and buttery, cinnamon streusel topping adds the perfect finishing touch. It’s a fantastic way to start a beautifully sunny spring morning.

The recipe which follows is slightly tweaked from the one I actually baked. In my original recipe, I incorporated fresh strawberries into the batter, along with the blueberries, blackberries, and raspberries. What I quickly discovered is that fresh strawberries get kind of wet and mushy when baked. In my book, that was a less than ideal texture. So, I traded in the fresh strawberries for some creamy strawberry-flavored yogurt. Now the only thing missing from these muffins is a bit of cranberry! Maybe next time we’ll go for quintuple berry muffins!!

Quadruple Berry Muffins

Ingredients

  • 1 1/2 cups cake flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup (1 stick) butter, melted and slightly cooled
  • 3/4 cup sugar
  • 1 egg
  • 1 cup strawberry yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries
  • 1/2 cup raspberries, coarse chopped
  • 1/2 cup blackberries, coarse chopped

For the Streusel

  • 1/2 cup flour
  • 1/4 cup sugar
  • 1/8 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 4 Tablespoons butter, melted and slightly cooled

Directions

Preheat oven to 375 degrees. Prepare muffin tins with liners. Combine flour, baking soda, baking powder and salt in a large bowl. In a separate bowl, whisk together the melted butter, sugar, egg, yogurt and vanilla. Pour the wet mixture into the dry mixture and stir, just until combined. Do not overmix. Fold in the fresh berries. Fill each muffin liner with a generous 1/4 cup of the batter.

For the streusel, stir together the flour, sugar, cinnamon, baking powder, and salt. Pour the melted butter over the dry ingredients. Stir until evenly moistened. Use your fingers to press the mixture together into large clumps. Break the large clumps into smaller crumbles over the muffin batter. Gently press the crumbles into the batter.

Bake for about 25 minutes.

Makes 12-15 Muffins

Pan-fried Tilapia with Grapefuit and Shaved Leeks

I bought a grapefruit a few days ago. Not sure exactly why. I don’t think I’ve ever actually purchased a grapefruit before and the last time I remember tasting one, it certainly wasn’t high on my list of favorite citrus fruits. It may have been seeing Natalie Portman sit down to enjoy a particularly pink grapefruit during an early scene in Black Swan. Perhaps if I eat a grapefruit, I will instantly transform into a lean and graceful prima ballerina too??

I’m starting to see the significance of subtle advertisements placed throughout movies and television shows. I suspect that Sunkist had a sneaky hand in this.

So, I’ve had this grapefruit sitting on my counter for a few days. I think I imagined that I was going to crack it open at breakfast one morning and dive in with a spoon, perhaps with a poached egg on the side, ballerina style. But, morning after morning, I glanced at that grapefruit and then reached for my Frosted Mini Wheats instead. Ultimately, I figured I should do something with the large, lonely citrus. After rooting through the freezer and locating a few frozen Tilapia fillets, I developed a plan.

I’d combine the sweet and bitter grapefruit segments with thinly sliced, mild-tasting leeks in a Honey-Dijon vinaigrette and serve over a simple pan-fried Tilapia fillet. A mound of quick-cooking cous cous completes the meal. You can thinly slice the leeks using a sharp knife or shave them with a mandoline. This recipe can easily be adapted for other types of fish or seafood. Simply adjust the cooking time based on the thickness of your fish.

Somehow, the combination of flavors, textures and temperatures in this dish managed to magically transform the grapefruit into a very welcome guest on my plate. Still not sure I’d ever enjoy sitting down for breakfast with half a grapefruit and a spoon. But I’d definitely invite a grapefruit to this dish again. Heck, I was never cut out to be a ballerina anyway!

Pan-fried Tilapia with a Melange of Grapefruit and Shaved Leeks

Ingredients

For the Fish:

  • 4 Tilapia Fillets
  • Salt and Pepper
  • 1/2 cup Flour
  • Olive Oil

For the Grapefruit and Leek Melange

  • 1 large Grapefruit, segmented*
  • 1 Leek, halved and thinly sliced or shaved**
  • 1/8 cup Apple Cider Vinegar
  • 1/4 cup Olive Oil
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Honey
  • 2 teaspoons Dijon Mustard
  • Salt and Pepper

To Serve

  • 2 cups plain Cous Cous, prepared according to package directions in lightly salted water

Directions

To prepare the melange, cut each grapefruit segment into thirds. Combine with the shaved or thinly sliced leeks. Prepare the dressing by combining the remaining ingredients in a separate bowl and whisking until well-blended. Pour a couple tablespoons of the dressing over the grapefruit and leeks. Set aside. Reserve the remaining vinaigrette for the cous cous.

For the fish, season each fillet with salt and pepper. Then, lightly coat each fillet with flour. Heat a thin, even layer of olive oil in a large fry pan over medium heat. Get it good and hot. Place the fillets into the hot oil and cook for 2-3 minutes on each side until golden brown and fully cooked.

To serve, toss the prepared cous cous in a little of the reserved vinaigrette. Place a cooked fillet on top of a mound of cous cous and top with the melange of grapefruit and leeks.

Buttermilk Battered Coconut Shrimp with Pineapple Chipotle Dipping Sauce

This recipe is a holdback from our New Year’s Eve celebration. Poor planning necessitated a few New Year’s recipe alterations. Namely, my lack of vegetable oil for frying the shrimp led to baking, which produced a delicious (and lower-fat) coconut shrimp, but not exactly my ideal result. I strive to present you with the ideal. So, I reserved this recipe until I had the opportunity to prepare it as planned.

The first time I ever made coconut shrimp was for a Caribbean-themed bridal shower, which I threw in honor of my sisters, who were having a double cruise-ship wedding. At the time, I used a recipe for beer-battered coconut shrimp which I’d found online. I’ve since developed my own buttermilk-based recipe, but I fully stand by the battering idea. A quick dip in a bit of batter helps the coconut to adhere to the shrimp and produces a fantastic, doughy coating around the shrimp.

To save a bit on the fat and calorie count, you can bake these little guys in a 400 degrees oven for about 15 minutes or so, until the coconut begins to turn golden and the shrimp is fully cooked. But, hands-down, my preferred method is frying. Go ahead and indulge! A sweet and spicy Pineapple Chipotle Dipping Sauce makes the perfect accompaniment to these tasty shrimp.

Buttermilk-Battered Coconut Shrimp with Pineapple Chipotle Dipping Sauce

Ingredients

For the Shrimp

  • 3/4 cup Flour
  • 1 teaspoon Baking Soda
  • 3/4 cup Buttermilk
  • 2 Eggs
  • Creole Spice Blend
  • 1 pound Jumbo Shrimp, peeled and deveined, tail-on
  • 1/2 cup Flour
  • 2 cups Shredded, Sweetened Coconut
  • Vegetable Oil, for frying

For the Dipping Sauce

  • 1 (12-ounce) jar Pineapple Preserves (or Orange Marmalade)
  • 1-3 Chipotle Peppers (from a can of Chipotle in Adobo)

Directions

To prepare the batter, combine flour and baking soda. Stir in the buttermilk and eggs until well blended. Season with a dash or two of Creole spice blend.

To prepare the shrimp, arrange a plate of flour, the bowl of batter, and a plate of the coconut. Holding by the tail, press each shrimp in the flour to lightly coat. Then, dip into the batter and allow the excess to drip away. Press into the shredded coconut to cover both sides. Place the coconut-coated shrimp onto a baking sheet until you’ve prepared all of the shrimp.

Heat about an inch of vegetable oil in a large frying pan, over medium heat, until it’s good and hot. Place several shrimp in the hot oil and cook for 2-3 minutes on each side, until the coconut is golden brown and the shrimp is fully cooked. The oil should sizzle around the shrimp as it cooks. If the coconut browns too quickly, reduce the heat.

Prepare the dipping sauce by blending the pineapple preserves and chipotle peppers in a blender, food processor, or with an immersion blender. Adjust the quantity of chipotle peppers based on your desired spiciness.

Serve the shrimp with a simple baby spinach and bacon salad, dressed in a honey balsamic vinaigrette.

Honey Balsamic Vinaigrette

Ingredients

  • 1/8 cup Balsamic Vinegar
  • 1/4 cup Oil (Olive, Canola, Sesame)
  • 2 Tablespoons Honey
  • 1 Tablespoon Dijon Mustard
  • Salt and Pepper

Directions

Whisk together all ingredients until well combined or combine all ingredients in a container with a tight-fitting lid and shake vigorously, until blended.

Cranberry Orange Sauce, Super Stuffing, and Other Thanksgiving Sides

It’s Thanksgiving Week here at The Gourmand Mom. Yesterday we started talking about the side dishes; my personal favorite part of the Thanksgiving feast. Today, we’re going to continue looking at a few easy and delicious dishes to complete any Turkey Day buffet. We’ll start with a fresh cranberry sauce, accented with freshly squeezed orange juice and zest. Then, we’ll take a look at my favorite Sausage, Apple, and Leek Stuffing recipe. After that, we’ll take a glance back at several other previously-posted Gourmand Mom recipes which would work beautifully for this occasion. Pick and choose what works for you.

As a child, I was a jellied cranberry sauce girl, through and through. I can not tell a lie; I still love the stuff. But, over the years, I’ve also learned to love fresh, whole berry cranberry sauce. It’s delicious paired with a bite of turkey or spread on leftover turkey sandwiches. I’ve even used it to make cranberry linzer-style cookies and baked it with brie wrapped in puff pastry. Spread some on top of a cheesecake for a seasonal touch!

Fresh cranberry sauce can be as simple as simmering cranberries in water with a bit of sugar or you can get creative incorporating other flavors. Most commonly, other fruit flavors are added, though I once made a cranberry sauce which featured caramelized onions. And I’ve got to admit that it was pretty spectacular. But, a cranberry-onion sauce might not be up everyone’s alley, so today we’re sticking with a basic Cranberry Orange Sauce. We’re replacing part of the water with fresh squeezed orange juice, then mixing in the zest of the orange skin. Simple and delicious.

Cranberry Orange Sauce

Ingredients

  • 1 12-ounce bag Fresh Cranberries
  • 3/4 cup Sugar
  • Juice from 2 Oranges (about 1/2 cup)*
  • 1/2 cup Water*
  • Zest from 1 Orange

*Use 1 cup of liquid total.

Directions

Rinse cranberries and carefully examine for any stems or overly mushy berries. Combine all ingredients in a saucepan over medium heat. Bring to a simmer. Lower heat and continue simmering for 10-12 minutes, stirring occasionally, until all cranberries have popped and the mixture has thickened. Remove from the heat and cool completely before serving.

The Stuffing

A few months ago, we celebrated Thanksgiving in June; a prelude to Christmas in July. For our summertime Thanksgiving meal, we enjoyed an open-faced turkey sandwich. On that sandwich, we piled on my favorite Thanksgiving stuffing. The secret is the sausage. My mom’s traditional stuffing incorporates the turkey giblets. You know, that pouch of organs which comes stuffed inside the turkey. The thought of it makes my skin crawl. Though, to be completely honest, I really enjoyed the texture which those giblets added to the stuffing. Regardless, I just can’t bring myself to use the giblets. For me, the perfect stuffing addition is ground sausage. The sausage adds such an incredible flavor and that great texture I was so fond of as a child. To the sausage, we add some mild leeks, sweet apples, and a generous handful of dried cranberries. Herb-seasoned bread cubes and chicken stock complete the mix. You won’t need more than a little salt and pepper after that.

The original idea for this stuffing comes from the Food Network recipe, found here. Over the years, I’ve adapted and simplified the recipe to suit our tastes. The recipe can easily be doubled, tripled, or stretched by adding more bread cubes and stock. Add the stock gradually until it reaches the right consistency. The mixture should be moist, but not mushy.

Sausage, Apple, and Leek Stuffing

Ingredients

  • 1 pound Bulk Breakfast Sausage
  • 2 Tablespoons Butter
  • 2 Granny Smith Apples, peeled and diced
  • 1 1/2 cup Leeks, finely sliced (about 1 large leek)*
  • 6 cups Herb-Seasoned Bread Cubes
  • 2 1/2 cups Chicken Stock (approximately)
  • 1/3 cup Dried Cranberries
  • Salt and Pepper, if desired

Directions

Preheat oven to 375 degrees. In a pan, cook the sausage until fully cooked, about 8-10 minutes. As it cooks, use a spoon to break up the sausage into small pieces. Remove the cooked sausage and place it in a large bowl. In the same pan (no need to clean it out) melt the butter over medium heat. Add the apples and leeks. Cook for 3-4 minutes until softened. Add the apples and leeks to the bowl with the sausage. Add bread cubes and dried cranberries. Stir to combine. Slowly add the chicken stock, stirring between additions to give the bread a chance to absorb the stock. Continue adding stock until the stuffing is moistened but not mushy. Most of the bread cubes should still appear as cubes. (2 1/2 cups of stock should be about right, but add a little less or a little more, as needed, to get the right consistency.) Place the stuffing in a baking dish and bake for about 30 minutes, until heated through and the top feels firm.

Serves 8-10

*The stuffing can be fully prepared ahead of time, refrigerated and then baked before serving.
